Sharpen Your Skills: A Knife Techniques Class at Portland Culinary Workshop

Confession time: Unlike many food bloggers, I’ve never aspired to become a chef through formal cooking school. My passion for cooking and baking runs deep, and I find immense joy in sharing that love with others. Food, in all its forms, captivates me – from creating it to devouring it, photographing it, discussing it, and, of course, writing about it.

And eating. Yes, eating! Did I mention just how much I adore eating?

While formal culinary education isn’t my goal, I thoroughly enjoy participating in cooking classes. If I could attend one every quarter, I’d be ecstatic! Learning new skills, refining existing techniques, and simply expanding my knowledge base invigorates me. Continuous learning is crucial, not just in life, but especially in the kitchen – even for a home cook like myself.

As a thoughtful Christmas gift, my husband enrolled us in a knife techniques class at the Portland Culinary Workshop. I was thrilled! Knives! Absolutely! And, of course, cooking with those knives. Fantastic!

Unveiling the Art of Knife Techniques: A Culinary Adventure

On a brisk, gray morning, my husband and I ventured to the Portland Culinary Workshop, located at 807 North Russell in Portland, Oregon. We were greeted by instructor Melinda Casady – whose official bio includes the words “renegade” and “pirate,” immediately signaling we’d get along splendidly. As we entered, we found ourselves surrounded by fellow culinary enthusiasts, all eager to master the art of knife skills. The class was a diverse mix, with men and women ranging from their 20s to their 70s, and even a young boy who appeared to be somewhere between 10 and 15 years old (guessing ages in that range is definitely not my forte).

Clutching our coffees, we gathered near the front table as Melinda commenced her presentation.

She began by discussing the various types of knives and their specific uses. She covered essential topics such as knife materials, proper storage, sharpening techniques, and the importance of choosing the right cutting board. Melinda then proceeded to demonstrate the correct methods for slicing and chopping ingredients like peppers, lemongrass, garlic, onions, fennel, ginger, and herbs. She also showed us how to julienne vegetables such as carrots. I diligently took notes, absorbing every ounce of her extensive knife knowledge.

Melinda stands out as one of the most exceptional cooking instructors I’ve had the pleasure of learning from. She possesses a wealth of practical information and a clear mastery of her subject. However, being a great cooking instructor requires more than just expertise. I’ve attended classes led by talented chefs and cookbook authors, some of which were fantastic, while others fell flat. A great teacher needs to be an attentive listener, a captivating storyteller, and have an exceptional sense of timing. Melinda excelled in all three areas, making this class truly exceptional.

She also generously provided samples of all the ingredients she used during her demonstrations, including an incredibly delicious candy fennel (believe me, it’s addictive!). Offering samples throughout the demonstration portion of the class is always a winning strategy.

Following Melinda’s engaging and informative knife demonstrations, it was our turn to put our newfound knowledge into practice.

The Portland Culinary Workshop features four workstations at each table, providing a great opportunity to connect with fellow students. The former journalist in me enjoys striking up conversations and learning about everyone’s backgrounds. I discovered that many participants received the class as a gift, some were regulars at the workshop, and others were looking to enhance their culinary skills for professional endeavors, such as catering or assisting with a family business. The atmosphere was friendly and welcoming, creating a level playing field for all. Cooking classes are far less enjoyable when there are know-it-alls or show-offs present.

Meanwhile, I had a blast working with the onions…until the inevitable happened, and our eyes started to water profusely.

I attempted to share a tip I’d heard from a friend – cutting away from the onion to avoid the gasses that cause tears. However, Melinda swiftly debunked it as just another urban legend. My eyes!

I’ve chopped countless onions in my lifetime, so it wasn’t an entirely new skill, but it’s always beneficial to practice and refine techniques.
