I’m a huge brunch enthusiast!

While I cherish brunch with my family, there’s something extra special about hosting my girlfriends for a weekend brunch gathering.

Of course, we could simply open a bottle of prosecco, rosé, or even a whisky, and call it a day. However, a brunch with my closest friends deserves a memorable drink to toast to life’s joys and milestones.

That’s where these delightful Raspberry Mimosas come into play.

A mimosa is a classic cocktail, typically a blend of Champagne and fruit juice.

It’s generally served in a tall Champagne flute and is a staple for brunch, weddings, bridal showers, and springtime celebrations.

While the standard mimosa recipe calls for equal parts Champagne and orange juice, this post will demonstrate the many exciting variations you can create and enjoy!

  • Champagne or Sparkling Wine: Use your preferred sparkling wine. My go-to for mimosas is Prosecco, but Cava from Spain or a dry sparkling wine from the US also work beautifully.
  • Orange Juice: Staying true to the traditional mimosa, we’re using orange juice as a base for these raspberry delights.
  • Water and Sugar: These two ingredients are necessary to create the simple syrup that forms the sweet base of the cocktail. Granulated sugar is the best choice.

This recipe requires only a few basic kitchen tools:

  • Large Pot: You’ll need a large pot or saucepan to make the raspberry syrup. My Dutch oven is my preferred choice.
  • Fine Mesh Strainer: A fine mesh strainer is essential to strain the liquid and separate it from the raspberry seeds.
  • Large Bowl: You will use a large bowl to catch the strained raspberry mixture.
  • Jar or Measuring Cup: A jar or measuring cup with a pouring spout helps to neatly pour the raspberry syrup into the champagne flutes.

Step-by-Step Instructions for Perfect Raspberry Mimosas

In a medium saucepan over low to medium heat, combine the water, sugar, and raspberries.

Prepare two champagne flutes. Add 1 tablespoon of orange juice and 2 tablespoons of raspberry syrup to each glass. Top with Champagne or sparkling wine.

Cook over medium heat for 2-3 minutes, until the raspberries soften and can be easily mashed with a spatula or spoon. Stir regularly to combine ingredients.

Strain the liquid through a fine mesh strainer into a large bowl, ensuring only the smooth liquid remains. Transfer the strained liquid to a jar or measuring cup with a spout for easy pouring.

Set out two glasses. To each glass, add 1 tablespoon of orange juice, 2 tablespoons of raspberry syrup. Then fill the rest of the glass up with Champagne or sparkling wine.

  4. Set out two glasses. To each glass, add 1 tablespoon of orange juice, 2 tablespoons of raspberry syrup. Then fill the rest of the glass up with Champagne or sparkling wine.
