Crafting the Perfect Garlic Herb Butter

This versatile garlic herb butter is a staple in my kitchen. I use it for so many things – slathered on corn on the cob, tossed with roasted vegetables, or spread on warm biscuits.
The combination of creamy unsalted butter, fragrant fresh rosemary, pungent garlic, and a squeeze of bright lemon juice is simply irresistible. Don’t forget the salt and pepper!
Roasting Your Lemon Herb Chicken: Step-by-Step

Generously rub the garlic herb butter under the chicken skin and all over the outside. Don’t forget to get those wings and legs!
Be warned: this can get a little messy, but using your hands is the best way to ensure every nook and cranny is coated in buttery goodness. Your hands are your greatest tools!

As your chicken roasts in the oven at 425 degrees, the aroma will fill your home with the most mouthwatering scent.
After the first 30 minutes, use a pair of tongs to carefully flip the chicken over. Having an extra pair of hands to steady the roasting pan can be a big help during this step.

Baste the chicken with the flavorful pan juices. This will help keep it moist and ensure a beautifully golden-brown skin.
Return the chicken to the oven for another 30-40 minutes. During this time, place your baking sheet of prepared vegetables on the rack beneath the chicken (instructions below).

To ensure your chicken is cooked to perfection, use an instant-read meat thermometer. It’s done when it reaches an internal temperature of 165 degrees Fahrenheit.
Before carving, let the chicken rest on the counter for 10-15 minutes. This allows the juices to redistribute, resulting in a more tender and flavorful bird.

Roasted Vegetables: The Perfect Complement

Let’s talk veggies!
I’m a huge fan of roasted vegetables. They’re incredibly easy to prepare and bursting with flavor. They make a fantastic side dish, and sometimes I even enjoy them for lunch!
Simply take about a tablespoon of the reserved herb butter and rub it all over your chopped vegetables.
Season generously with salt and pepper.

Bake the vegetables on a rack underneath the chicken for the last 40 minutes of roasting time.
Remove the asparagus and carrots after 20 minutes, as they cook faster. Return the potatoes to the oven; they should be done at approximately the same time as the chicken.

Feel free to experiment with other vegetables, but keep in mind that different veggies will require different roasting times. Adjust accordingly.
For instance, large baking potatoes will take longer than small red potatoes, and significantly longer than baby carrots. Keep a close eye on your vegetables and remove them from the oven when they are tender but not mushy.

Roast chicken pairs beautifully with a dry, medium-bodied white wine.
This Lemon Herb Roast Chicken is particularly delightful with a Van Duzer Pinot Blanc. The playful hints of lemon and pineapple complement the herbs and lemon in the chicken perfectly.
