Other tips included: “Prepare yourself for the meat sweats,” and “Do not even think about bringing your vegan friends.” With these warnings in mind, and an empty stomach ready for action, I recently had the chance to attend the pre-opening event and dinner service at Fogo de Chao in Portland, Oregon. It was an absolutely memorable dining experience.
This wasn’t just a meal; it was a culinary adventure that tantalized the taste buds and left me feeling incredibly satisfied. The atmosphere was electric, the service impeccable, and the food? Oh, the food was a carnivore’s dream come true. Let me take you through the whole experience.

Fogo de Chão, pronounced “fo-go dee shoun,” is an authentic Southern Brazilian steakhouse renowned for its distinctive churrascaria-style dining. The Portland, Oregon location opened its doors on May 2, 2014. My husband and I were fortunate enough to get a preview at a special pre-opening dinner on May 1st. The evening started on a high note with the official presentation of a $3,000 donation from Fogo de Chao to Partners for a Hunger-Free Oregon, demonstrating their commitment to giving back to the local community.

The lively and expansive atmosphere, coupled with the open layout, makes it an ideal location for family gatherings, a fun night out with the girls, or even a double date. Each diner receives a two-sided disc. When you are ready for the gauchos to visit your table with their skewers of meat, you turn the disc to the GREEN side. When you need a break or are satisfied, you flip the disc to the RED side. This simple yet effective system allows you to control the pace of your meal and enjoy the experience at your own leisure.

Two of my personal favorites were the filet mignon and the bacon-wrapped chicken breast. Both were incredibly tender, juicy, and bursting with natural flavor. The minimal seasoning and sauces allowed the inherent quality of the meat to shine through.

My husband opted for the traditional *Signature Papaya Cream*, while I decided to indulge in the chocolate layer cake.

If you’re going to indulge, you might as well go all out from start to finish, right? The desserts are generously portioned, rich, and utterly delicious.
In the end, I was very happy I listened to my friends’ advice and arrived on an empty stomach. We left with full, happy bellies and a truly memorable dining experience that we look forward to recreating again with friends and family in the future.
