Donuts

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda (recommended brand)
  • 1/4 tsp sea salt
  • 2 eggs (recommended brand)
  • 4 Tablespoons full-fat coconut milk
  • 1/2 tsp vanilla extract (recommended brand)
  • 5 Tablespoons maple syrup
  • 4 Tablespoons coconut oil, melted (recommended brand)

Chocolate Glaze (dairy-free option)

  • 1/2 cup semi-sweet chocolate chips* (recommended brand)
  • 2 Tablespoons coconut oil (recommended brand)

Cinnamon Sugar Topping (refined sugar-free option)

  • 2 Tablespoons coconut palm sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your donut pan with a small amount of coconut oil to prevent sticking.
  3. In a medium bowl, combine the dry ingredients for the donuts: almond flour, coconut flour, sea salt, and baking soda. Whisk them together until well combined.
  4. In a separate, larger bowl, whisk together the wet ingredients: eggs, full-fat coconut milk, maple syrup, melted coconut oil, and vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredient mixture, stirring gently until all ingredients are just combined and no dry streaks remain. Be careful not to overmix.
  6. Transfer the donut batter into a piping bag for easy dispensing. Alternatively, you can use a large plastic freezer bag, snip off one of the corners (about a 1/2-inch opening), and use it as a makeshift piping bag.
  7. Gently squeeze the batter into each donut cavity in your prepared pan, filling them approximately 3/4 of the way full. To help the batter settle evenly and remove any air pockets, gently tap the donut pan against your kitchen counter a couple of times.
  8. Bake in the preheated oven for 18-20 minutes. The donuts are done when the edges are lightly golden brown and a toothpick inserted comes out clean.
  9. Once baked, remove the donuts from the oven and allow them to cool in the pan for just a couple of minutes. While they cool, prepare your chosen topping.
  10. For the Chocolate Glaze: In a small, microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth. Stir well to blend.
  11. For the Cinnamon Sugar Topping: In a shallow medium bowl, mix together the coconut palm sugar and ground cinnamon until the cinnamon is thoroughly integrated with the sugar. Set this mixture aside.
  12. Carefully invert the donut pan onto a wire cooling rack, allowing the donuts to release.
  13. Once slightly cooled, dip the top of each donut into either the warm chocolate glaze or roll it in the cinnamon sugar mixture, coating them to your liking. Serve immediately and enjoy!

Notes

For the chocolate glaze, I highly recommend finding a good dairy-free and soy-free brand of chocolate chips to keep these truly Paleo-friendly and suitable for those with sensitivities.
