Ingredients
(Yields: 6 Servings)
- 12 ounces pasta (e.g., spaghetti, linguine, fusilli, penne)
- 1 Tablespoon extra virgin olive oil, divided
- 2 Tablespoons pine nuts
- 10 ounces cherry tomatoes (about 24-30), rinsed
- ¾ cup pesto sauce (store-bought or homemade fresh basil pesto)
- salt and freshly ground black pepper to taste
- grated or shaved Parmesan cheese, or vegan alternative, and fresh chopped parsley or basil for serving and garnish, if desired
- Optional: ¼ – ½ cup reserved pasta water

In a large pot, bring generously salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve about ½ cup of the starchy pasta water. Drain the pasta and set aside.

While the pasta is cooking, heat a large skillet over medium heat (no oil needed yet). Add the pine nuts and lightly toast, stirring regularly, for about 2-3 minutes until golden and fragrant. Be careful, they can burn quickly! Remove the toasted pine nuts from the pan and transfer them to a small bowl.

Add 1 tablespoon of olive oil to the same skillet and increase heat to medium-high. Add the cherry tomatoes. Cook the tomatoes for 3 to 6 minutes, stirring occasionally, until they start to slightly char, blister, and gently burst, releasing their sweet juices. Avoid overcooking them to prevent them from becoming too mushy.

Add the drained, warm pasta directly to the skillet with the blistered tomatoes.

Pour the pesto sauce over the pasta and tomatoes. Using tongs, toss all ingredients together until the pasta is evenly coated. If the sauce seems too thick, add a tablespoon or two of the reserved pasta water, stirring until you achieve a silky consistency. Season with salt and freshly ground black pepper to taste.

Sprinkle with the reserved toasted pine nuts and toss gently once more to combine.
