For your next pizza night, try this simple Thai Curry Pizza recipe. It's full of bold flavors to make your taste buds happy and adds a tasty spin to a classic family favorite!

If you love pizza like the family loves pizza, and you enjoy Thai food and Thai flavors, then this Thai Curry Pizza recipe is for you!

Friday night has been Pizza Night in the house for so many years, ever since the kids were toddlers. We've used this tried-and-true pizza dough recipe for years as the base. Then we like to mix it up between classic cheese and pepperoni to Taco Pizza, Shrimp Pesto Pizza, and our CPK Copycat Thai Chicken Pizza.

This pizza recipe was inspired by the recent travels to Thailand. If you can't tell, We've been super inspired to create a lot of new Thai recipes since that trip! And We simply love a good mashup of two different cuisines and types of food on one plate.

🛒 Ingredient notes

These are the simple ingredients you need to make this curry pizza. Full measurements are in the recipe card at the bottom of the post, but here are a few notes about key ingredients.

Pizza dough – Use our favorite pizza dough recipe, or use store-bought pizza crust to make it even easier.

Chicken – Unlike the CPK Copycat Thai Chicken Pizza, which uses shredded chicken breast or rotisserie chicken, this recipe calls for ground chicken. The ground meat absorbs all of those tasty Thai flavors perfectly for pizza. You can substitute ground pork or ground beef if you prefer. And you can make it a vegetarian pizza by using tempeh or tofu crumbles.

Vegetables – We love the added crunch fresh vegetables like red bell peppers add, but you could also add green bell pepper, green beans, black olives, or bean sprouts to the topping simply before baking.

Spices and seasonings: Instead of a traditional pizza sauce, this recipe uses a combo of curry powder, minced garlic, soy sauce and yellow onion to create the flavoring. You could also substitute a tablespoon or more of your favorite yellow curry sauce, or add a teaspoon of red curry paste or chili paste, to the topping mixture instead, if you want. If you truly want to add some tang, add a half teaspoon of fish sauce to the mixture while it's cooking in the pan.

Additional options:

  • sometimes We like to add a squeeze of fresh lime juice over the top of the pizza after it has baked.
  • try a peanut sauce base instead of the curry powder for a different Thai flavor profile.
  • add some cashew nuts or peanuts to the top for added crunch.
  • sprinkle other fresh herbs such as mint leaves to the baked pizza simply before serving.

✅ Step-by-step instructions

Start by preheating your oven to 400°F.

  1. Prepare your preferred pizza dough. If using our simple pizza dough recipe or a store-bought pizza crust, pre-bake the crust on its own for 8 minutes. Remove from the oven and set aside.
  2. In a large skillet or saucepan, add the olive oil (or vegetable oil), ground chicken, diced onion, diced potatoes, minced garlic, curry powder, soy sauce.

3. Cook the Thai pizza topping until the chicken is cooked.

4. Place the prepared pizza dough onto a pizza pan and top with the curry chicken topping.

5. If you want to keep this dairy-free, go ahead and bake at 400°F for 10-15 minutes. Add 5 minutes or more if you did not pre-bake the crust.

6. If you want, add some shredded mozzarella cheese or your favorite dairy-free mozzarella shreds to the top before baking at 400°F for 10-15 minutes. Add 5 minutes or more if you did not pre-bake the crust.

Season to taste with kosher salt and black pepper. Top with sliced basil and sliced green onions simply before serving.
