Friday night has been Pizza Night at our house for as long as I can remember, a tradition that started when the kids were just toddlers. Over the years, we’ve relied on this tried-and-true pizza dough recipe as our foundation. The inspiration for this particular pizza recipe came from my recent travels to Thailand. I genuinely enjoy the art of combining two distinct cuisines and food styles onto a single plate, creating a truly unforgettable dining experience.

Key Ingredients for Your Thai Curry Pizza

Here’s a breakdown of the key ingredients you’ll need to create this flavorful curry pizza. You’ll find the full measurements in the recipe card at the bottom of this post. Let’s take a closer look at some essential components:
Pizza Dough: You have options! Feel free to use our favorite homemade pizza dough recipe for a truly authentic experience. Alternatively, you can save time by using a store-bought pizza crust for convenience.
Chicken: Unlike the CPK Copycat Thai Chicken Pizza, which typically uses shredded chicken breast or rotisserie chicken, this recipe calls for ground chicken. The ground meat readily absorbs all the amazing Thai flavors, infusing the pizza with incredible taste. You can easily substitute ground pork or ground beef if you prefer. For a vegetarian option, try using tempeh or tofu crumbles instead.
Fresh Vegetables: I absolutely adore the delightful crunch that fresh vegetables like red bell peppers add to this pizza. However, feel free to get creative and incorporate other veggies like green bell peppers, green beans, black olives, or even bean sprouts as a topping just before baking.
Spices and Seasonings: Forget traditional pizza sauce! This recipe utilizes a unique blend of curry powder, minced garlic, soy sauce, and yellow onion to create its distinctive flavor profile. You can also substitute a tablespoon (or more, depending on your preference) of your favorite yellow curry sauce. For an extra kick, consider adding a teaspoon of red curry paste or chili paste to the topping mixture. If you’re looking to add a touch of tang, a half teaspoon of fish sauce can also be incorporated while the mixture is cooking in the pan.
Creative Additions: The beauty of this recipe lies in its versatility. Don’t be afraid to experiment and add your personal touch!
- Sometimes, I like to add a squeeze of fresh lime juice over the top of the pizza after it’s been baked for a burst of citrusy freshness.
- For a completely different Thai flavor profile, try using a peanut sauce base instead of the curry powder mixture.
- Add some cashew nuts or peanuts to the top for an added layer of texture and crunch.
- Sprinkle other fresh herbs such as mint leaves over the baked pizza just before serving for an extra aromatic touch.
Step-by-Step Guide to Making Your Own Thai Curry Pizza
Let’s get started! Follow these simple steps to create your own delicious Thai Curry Pizza.
Begin by preheating your oven to 400°F (200°C).

- Prepare your preferred pizza dough. If you’re using our easy pizza dough recipe or a store-bought pizza crust, pre-bake the crust on its own for about 8 minutes. Remove it from the oven and set aside. This helps prevent a soggy crust.
- In a large skillet or saucepan, add the olive oil (or vegetable oil), ground chicken, diced onion, diced potatoes, minced garlic, curry powder, and soy sauce.

- Cook the Thai pizza topping until the chicken is fully cooked through. Be sure to stir frequently to ensure even cooking and prevent sticking.
- Place the prepared pizza dough onto a pizza pan or baking sheet. Evenly spread the flavorful curry chicken topping over the surface of the dough.

- If you want to keep this recipe dairy-free, go ahead and bake the pizza at 400°F (200°C) for 10-15 minutes, or until the crust is golden brown and the toppings are heated through. If you did not pre-bake the crust, add another 5 minutes or more to the baking time.
- If you’re a cheese lover, add some shredded mozzarella cheese or your favorite dairy-free mozzarella shreds to the top of the pizza before baking at 400°F (200°C) for 10-15 minutes. As with the dairy-free option, add 5 minutes or more to the baking time if you skipped the pre-baking step.
Season the pizza to taste with kosher salt and freshly ground black pepper. Garnish generously with sliced fresh basil and sliced green onions just before serving. The fresh herbs add a pop of color and enhance the overall flavor profile of the pizza.
