This hearty, healthy shrimp quinoa bowl is perfect for a quick lunch or dinner!

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 cup quinoa, cooked according to package directions
  • About 1 cup uncooked shrimp, peeled and deveined
  • About 1 cup broccoli, chopped into florets
  • 1 red pepper, diced
  • 1 corn on the cob, cooked and kernels cut off
  • 1/4 cup onion, finely chopped
  • 2 garlic cloves, finely minced
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground ginger, or freshly grated ginger
  • 1/4 cup coconut milk
  • Salt & pepper to taste

Instructions

  • First, cook the corn on the cob until tender, then cut the kernels off and set aside.
  • Next, prepare the quinoa according to the package instructions. This usually involves rinsing the quinoa, then simmering it in water or broth until all liquid is absorbed and the quinoa is fluffy.
  • Meanwhile, in a large skillet or wok, heat 3 tablespoons of extra virgin olive oil over medium heat.
  • Add the diced red peppers and chopped broccoli to the pan. Sauté for about 3 minutes, or until the vegetables are slightly softened but still retain a slight crispness.
  • Stir in the cooked corn kernels, raw shrimp, minced garlic, and chopped onions. Sprinkle in the paprika, ground cumin, and ground ginger. Continue to sauté for another 2-3 minutes, just until the shrimp turns opaque and pink. Be careful not to overcook the shrimp, as it can become tough.
