Welcome to berry season! As nature blesses us with an abundance of vibrant, juicy fruits, it’s the perfect time to indulge in homemade treats that capture the essence of summer. These raspberry bars are more than just a dessert; they are a celebration of summer’s bounty, featuring a rich, buttery shortbread crust, a luscious layer of sweet-tart raspberry jam, and a perfectly crumbly topping. Easy to make, incredibly portable, and a joy to share, they are poised to become a staple in your warm-weather baking repertoire.
Irresistible Raspberry Crumble Bars: Your Go-To Summer Dessert

There’s something uniquely satisfying about fruit bars, and these raspberry crumble bars truly shine during peak raspberry season (typically mid-July through August in regions like Oregon). They offer a delightful alternative to traditional pies, especially when you’re seeking a dessert that is both convenient and bursting with flavor. Here are just a few reasons why these bars are a perfect choice for all your summer adventures:
- Effortlessly Portable: Unlike slices of pie, these bars hold their shape beautifully, making them ideal for packing into containers or snack bags. They are perfect for picnics, beach trips, hikes, or any on-the-go snack requirement.
- Freezer-Friendly: Prepare a larger batch and freeze some for later! Keep a few in the refrigerator for immediate enjoyment throughout the week, and freeze the rest to savor the taste of summer well into the fall. Simply thaw at room temperature when a craving strikes.
- Handheld Perfection: Forget the forks and plates! These bars are designed to be eaten with your hands, adding to their casual charm and making cleanup a breeze.
- Superior Flavor and Texture: While pie has its place, crumble bars offer a dynamic textural experience. The combination of a substantial, buttery shortbread-like crust, a vibrant fruit filling, and a delightful, sweet crumb topping creates a symphony of textures and flavors that is truly addictive. The rich crust provides a satisfying base, the jam offers a burst of fruity sweetness, and the crumble adds a golden, slightly crunchy contrast.
These benefits make raspberry crumble bars an excellent choice for family gatherings, potlucks, or simply a sweet treat to brighten your day. Their rustic appearance and comforting flavors are sure to please everyone.
Crafting the Perfect Raspberry Crumble Bars: Essential Ingredients

This delightful summer dessert is built upon three key components, each contributing to its irresistible charm:
- The rich and tender shortbread crust
- A vibrant and flavorful raspberry jam filling
- The sweet and buttery crumble topping
For the solid components – the crust and the crumble topping – you will need a selection of basic baking ingredients that come together to form a truly delectable foundation:
- Butter: The star ingredient for both the crust and crumble, providing unparalleled richness and tender texture. Ensure it’s softened for the crust and cold for the crumble.
- Granulated Sugar: For sweetness in the crust.
- Light Brown Sugar: Adds a deeper, molasses-rich sweetness and contributes to the chewiness and flavor of the crumble topping.
- All-Purpose Flour: The structural backbone of both the crust and crumble.
- Baking Powder: Provides a slight lift and tenderness in the crumble.
- Ground Cinnamon: A touch of warmth and spice for the crumble, complementing the raspberry flavor beautifully.
- Salt: Essential for balancing the sweetness and enhancing all the flavors.
- Vanilla Extract: A fragrant addition to the crust, boosting its overall aroma and taste.

When it comes to the raspberry jam, you have the flexibility to choose between high-quality store-bought jam or the unparalleled taste of homemade. If you’re feeling adventurous and want to elevate your bars to the next level, I highly recommend trying a homemade version. Freshly made jam offers a brighter, more intense fruit flavor that truly makes these bars sing.
I recently shared my easiest 3-ingredient, 3-step homemade raspberry jam recipe, which is incredibly simple to prepare and results in a vibrant, delicious jam. This very recipe was used to create the mouth-watering raspberry crumble bars featured in these photos, proving that a little extra effort can yield significant flavor rewards.
Simple Steps to Bake Perfect Raspberry Crumble Bars
Making these delightful crumble bars is a straightforward process that yields impressive results. The full ingredient measurements and detailed step-by-step instructions are provided in the recipe card below, but here’s an overview of how these delicious bars come together.
First, prepare your baking pan. A 9×13-inch baking pan is ideal for this recipe. Line it with parchment paper, allowing some overhang on the sides for easy lifting, or simply grease the bottom and sides thoroughly with butter. This crucial step ensures your bars won’t stick and will be easy to remove and slice.

Begin with the crumb topping. In a large bowl, combine all the dry ingredients for the crumble. Then, using your fingertips or a pastry blender, work the cold, cubed butter into the mixture until it resembles coarse crumbs. The key here is to keep the butter cold, which helps create that signature crumbly texture. Once combined, set this enticing mixture aside.
Next, prepare the tender shortbread crust. Using a stand mixer fitted with a paddle attachment, cream together the softened butter and granulated sugar until they are just combined and light. Mix in the vanilla extract. Remember to scrape down the sides of the bowl with a spatula periodically to ensure all ingredients are thoroughly incorporated. In a separate bowl, sift together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture in the stand mixer, mixing on low speed until the dough just starts to come together and form a soft ball.

Gently press this dough evenly into the bottom of your prepared baking pan. For best results, aim for an even thickness across the entire bottom. If you have enough dough, you can also press a small amount up the sides of the pan to create a slight edge, though it’s not strictly necessary for delicious bars.

Now, it’s time for the star filling! Carefully spread your homemade or store-bought raspberry jam evenly over the pressed crust layer. Take care not to disturb the crust too much. Finally, sprinkle the reserved crumb topping generously and evenly over the raspberry jam. This creates a beautiful, golden-brown topping as it bakes.
Bake the bars in a preheated oven at 350°F (175°C) for approximately 40-45 minutes, or until the edges are lightly golden brown and the crumble topping is nicely toasted. The aroma filling your kitchen will be absolutely divine!

Once baked, remove the pan from the oven and allow the bars to cool at room temperature for at least 5-10 minutes before attempting to slice them. This cooling time is crucial, as it allows the jam to set and the bars to firm up, ensuring clean, beautiful cuts. For best results, you can even let them cool completely before slicing, especially if you’re looking for perfectly sharp edges.
Expert Tips and Creative Variations for Your Raspberry Crumble Bars

While this recipe is fantastic as written, a few simple tips and creative twists can make your Raspberry Crumble Bars even more spectacular:
- Thickening Liquid Jam: If your chosen raspberry jam is a bit on the thinner, more liquidy side, consider stirring in up to one tablespoon of cornstarch (or arrowroot powder) before spreading it over the crust. This will help it set nicely during baking and prevent it from becoming too runny.
- For an Extra Crunchy Crumble Topping: If you love a more substantial and crunchy topping, feel free to add old-fashioned rolled oats to the crumble mixture. Start with one cup of oats and mix them in. If you prefer even more texture, you can add up to two cups total. Be mindful not to add too much, as it could alter the ideal ratio of other ingredients. A sprinkle of chopped nuts like almonds or walnuts can also add a delightful crunch and nutty flavor.
- Flavor Variations: Don’t limit yourself to just raspberries! These bars are incredibly versatile. Experiment with other berry jams like strawberry, blueberry, or mixed berry. You can also mix a bit of lemon zest into the crust or directly into the jam for a brighter, more zesty flavor profile. A pinch of nutmeg or cardamom in the crumble can also introduce a warm, aromatic note.
- Serving Suggestions: While delicious on their own, these bars can be elevated with simple accompaniments. Serve them warm with a scoop of vanilla bean ice cream or a dollop of freshly whipped cream for a truly decadent experience. A light dusting of powdered sugar just before serving adds an elegant touch.
Storage and Freezing Instructions
To keep your Raspberry Crumble Bars fresh and delicious:
- Room Temperature: Store cooled bars in an airtight container at room temperature for up to one week.
- Freezing: For longer storage, ensure the bars are completely cooled. Slice them, then place parchment paper between individual bars to prevent sticking. Transfer them to a freezer-safe container or a heavy-duty ziplock bag. They can be frozen for up to two months. Thaw completely at room temperature before serving for the best texture and flavor.
Frequently Asked Questions (FAQ)
- Can I use fresh raspberries instead of jam?
- Yes, you can! If using fresh raspberries, you’ll want to toss them with about 1/4 to 1/2 cup of sugar (depending on the sweetness of your berries) and 1-2 tablespoons of cornstarch (to help thicken the juices). Spread them over the crust like you would the jam. The baking time might need to be adjusted slightly.
- How long do Raspberry Crumble Bars last?
- When stored properly in an airtight container at room temperature, they typically last for about 5-7 days. In the refrigerator, they can last a bit longer, up to 10 days.
- Can I make these bars ahead of time?
- Absolutely! These bars are an excellent make-ahead dessert. You can bake them a day or two in advance, or freeze them as described above for longer storage.
- What kind of baking pan should I use?
- A 9×13-inch glass or metal baking pan works best. Glass pans tend to conduct heat more evenly, while metal pans might require slightly shorter baking times. Always ensure you grease and/or line the pan adequately to prevent sticking.

- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ½ teaspoon salt
- 8 tablespoons cold, unsalted butter, cut into small cubes
Instructions
Make the Crumb Topping
- Combine all of the ingredients together in a large bowl. Using your hands or two forks, cut the butter into the dry ingredients. You can use your thumb and pointer finger to squeeze the butter and crumble it with the dry ingredients. Combine until you achieve small crumbles. Set aside.
Make the Crust

- In a separate large bowl, sift together the flour and salt. Slowly add it to the butter mixture in the stand mixer, and mix until the dough starts to form almost a ball.
- Gently press the dough into the prepared baking dish, using your hands to gently even out the dough across the whole dish and about 1/4″ up the sides. If you have a small rolling pin, you can also use that to even out the dough inside the pan.
Add the Jam, Crumb Topping, and Bake
- Once the dough is evened out at the bottom of the baking dish, spoon jam evenly over the dough.
- Top the jam layer with the prepared crumb topping.
- Bake at 350°F for 45 minutes. The edges of the dough will be slightly browned when done.
- Allow too cool at room temperature for 5-10 minutes, then slice into bars.
