Greece Saria Boat in sea from above

I recall one sweltering day, when a gentle breeze offered a welcome reprieve from the heat, as we journeyed by boat to Saria, a small, rocky volcanic island nestled just north of Karpathos. The island’s rugged beauty was captivating, but it was the lunch served on board that truly stole the show. Laid before us were perfectly grilled chicken souvlaki skewers, accompanied by fluffy rice, a crisp Greek salad, and fresh, crusty bread. To complete this idyllic meal, we enjoyed it with a refreshing, classic Greek beer: Mythos.

What is Greek Souvlaki? An Authentic Culinary Journey

Souvlaki, derived from the Greek word “souvla” (meaning skewer), is one of Greece’s most beloved and iconic fast foods, yet it’s rich in tradition and flavor. At its heart, traditional Greek Souvlaki consists of small, bite-sized pieces of meat threaded onto a skewer and then grilled to tender perfection. While pork is the most common choice across Greece, it’s not uncommon to find variations made with lamb, beef, or, as in this delightful recipe, chicken.

The versatility of souvlaki extends to how it’s served. It can be nestled inside a warm pita bread, often garnished with fresh tomatoes, onions, a sprinkle of paprika, and a generous dollop of creamy tzatziki sauce, resembling a gyro but with grilled meat chunks instead of sliced meat from a vertical rotisserie. Alternatively, and equally popular, it’s served as individual skewers, making it a perfect appetizer, a light meal, or a fantastic addition to a larger spread. In this form, it shares a conceptual similarity with Middle Eastern kebabs, highlighting the widespread appeal of skewered, grilled meats across various cultures.

The beauty of souvlaki lies in its simplicity. High-quality meat, a flavorful marinade, and expert grilling come together to create a dish that is both satisfying and incredibly fresh. Whether enjoyed on the bustling streets of Athens or in a tranquil seaside taverna, souvlaki remains a testament to the deliciousness of straightforward, well-prepared food.

Crafting the Perfect Greek Chicken Souvlaki Marinade

The secret to truly succulent, flavorful Greek chicken souvlaki lies unequivocally in its marinade. I was once told that marinating chicken overnight was the absolute key to achieving that irresistibly juicy and deeply flavorful Greek chicken. While an overnight soak yields phenomenal results, you can still infuse your meat with incredible flavor by marinating it for at least two hours. This minimum time allows the tenderizing and aromatic properties of the marinade to work their magic.

The cornerstone of an authentic Greek souvlaki marinade is remarkably simple, yet profoundly effective, combining just a few essential ingredients:

  • Fresh Lemon Juice: Not only does lemon juice brighten the flavors, but its acidity also acts as a natural tenderizer for the chicken, breaking down muscle fibers to ensure a melt-in-your-mouth texture.
  • Quality Olive Oil: A staple of Greek cuisine, good olive oil adds richness, helps carry the flavors deep into the meat, and keeps the chicken moist during grilling.
  • Minced Garlic: Fresh garlic provides a pungent, aromatic base that is fundamental to Greek flavor profiles.
  • Dried Oregano: This herb is quintessential to Greek cooking, imparting an earthy, peppery, and slightly bitter note that defines the classic souvlaki taste.
  • Salt and Pepper: Essential for seasoning, enhancing all other flavors and bringing them into harmony.

The beauty of this simple combination is undeniable. For my chicken souvlaki marinade, I like to add a touch of dried dill. This complements the fresh dill often found in homemade tzatziki sauce, creating a cohesive flavor profile when served together. You can also experiment with other Mediterranean herbs like thyme or marjoram for subtle variations.

Why Marinating is Essential

Marinating serves several crucial purposes:

  • Tenderization: The acids in lemon juice help to break down tough proteins, resulting in more tender meat.
  • Flavor Infusion: The oil and spices penetrate the chicken, ensuring that every bite is bursting with Greek flavors.
  • Moisture Retention: The oil in the marinade helps lock in moisture, preventing the chicken from drying out on the grill.

For best results, always ensure your chicken cubes are uniformly sized to allow for even marinating and cooking.

  • Fluffy Brown Rice: A simple yet effective side that soaks up all the delicious juices and marinade from the souvlaki. You could also opt for a lemon-herb infused rice for an extra layer of flavor.

Mastering the Grill: Tips for Flawless Souvlaki Skewers

Greek Chicken Souvlaki skewers

Achieving perfectly grilled Greek Chicken Souvlaki skewers is an art that’s easily mastered with a few key techniques. Follow these tips to ensure your chicken is juicy, tender, and deliciously charred every time:

  • Uniform Cuts for Even Cooking: Whether you’re using chicken, lamb, beef, pork, or even vegetables, always cut your ingredients into even-sized cubes. This consistency is crucial for ensuring that all pieces cook through at the same rate, preventing some from drying out while others are still undercooked.
  • Prevent Skewers from Burning: If you are using wooden skewers, remember to soak them in water for at least 30 minutes (or even longer, up to an hour) before threading the chicken and grilling. This simple step saturates the wood with water, which helps prevent the skewers from burning and charring excessively over the hot grill, keeping your presentation neat and tidy.
  • Give Your Skewers Breathing Room: When placing the skewers on the grill, resist the urge to crowd them. Give each skewer some breathing room around it, leaving a small gap between each one. Adequate space allows hot air to circulate evenly around the meat, promoting consistent cooking and a beautiful, all-around sear. Crowding the grill can lower the temperature and steam the meat instead of grilling it.
  • The Power of a Meat Thermometer: The only sure-fire way to guarantee your chicken is cooked thoroughly and safely is to use a meat thermometer. Insert it into the thickest part of a piece of chicken on a skewer. Chicken is fully cooked and safe to eat when it reaches an internal temperature of 165°F (74°C). This prevents both undercooked dangers and overcooked dryness.
  • Don’t Overhandle: Once the skewers are on the grill, resist the temptation to constantly move them. Let them sear undisturbed for a few minutes on each side to develop that desirable golden-brown crust and char marks before turning.
  • Rest the Meat: After grilling, transfer the cooked chicken souvlaki to a platter and loosely tent it with foil. Let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat, resulting in even juicier and more tender chicken.

The Perfect Sip: Wine Pairings for Greek Chicken Souvlaki

Greek white wine

When indulging in authentic Greek food like chicken souvlaki, what better to pair it with than – you guessed it! – an equally authentic Greek wine? Greece holds a storied place in the history of winemaking, being one of the world’s first producers of this revered beverage.

For chicken souvlaki, especially with its lemon and herb-infused profile, a crisp white wine is often the ideal choice. Assyrtiko is arguably Greece’s most celebrated and widely produced white wine, primarily from the volcanic island of Santorini. This light-bodied white wine is known for its high acidity, bright citrus notes of lemon and grapefruit, and often a distinctive minerality. Its vibrant character makes it a fabulous match for the fresh, grilled flavors of chicken souvlaki, cutting through the richness and enhancing the herby zest. It’s also utterly refreshing to sip on its own, particularly on a smoldering summer day.

Beyond Assyrtiko, other excellent Greek white wine options include:

  • Moschofilero: A floral and aromatic white with notes of rose, citrus, and spice, offering a delightful and fragrant pairing.
  • Robola: From the island of Cephalonia, this white offers crisp acidity and mineral undertones, similar to Assyrtiko but with its own unique island charm.

If you prefer red wine, a lighter-bodied Greek red can also work, especially if your souvlaki has bolder spices or if you’re serving it with heartier sides. Look for a young Agiorgitiko from Nemea, known for its soft tannins and red fruit flavors, or a chilled Xinomavro, which can offer savory notes that complement grilled meats.

Frequently Asked Questions about Greek Chicken Souvlaki

Q: Can I prepare the chicken ahead of time?

A: Yes, absolutely! Marinating the chicken for a few hours or even overnight (up to 24 hours) will infuse it with even more flavor and ensure maximum tenderness. Threading the chicken onto skewers can also be done a few hours in advance and kept refrigerated until you’re ready to grill.

Q: What if I don’t have an outdoor grill?

A: No problem! You can easily cook chicken souvlaki indoors. A grill pan on the stovetop works wonderfully, or you can bake the skewers in the oven at a high temperature (around 400°F or 200°C) until cooked through. For a nice char, finish them under the broiler for a few minutes on each side.

Q: How can I make dairy-free buttermilk?

A: To make dairy-free buttermilk, simply combine 1 cup of your preferred dairy-free milk (such as almond or soy milk) with 1 tablespoon of lemon juice or apple cider vinegar. Let it sit for 5-10 minutes until it slightly curdles. Use this mixture in place of regular buttermilk in the marinade.

Q: Can I add vegetables to the skewers?

A: Absolutely! Adding chunks of bell peppers (red, yellow, or orange), red onion, cherry tomatoes, or zucchini to your skewers creates a colorful and nutritious meal. Just be mindful of cooking times, as vegetables may cook faster than chicken. You might want to alternate chicken and vegetable pieces on the same skewer, or create separate vegetable skewers.

Q: How long do leftovers last?

A: Cooked chicken souvlaki can be stored in an airtight container in the refrigerator for up to 3-4 days. It’s delicious reheated in a pan, in the oven, or even enjoyed cold in salads or wraps.
