This Peach Tomato Salad is perfect for any picnic or barbecue! It's full of in-season savory tomatoes with sweet peaches, peppery arugula, and tangy feta cheese.
Summer is here, and that means a bounty of fresh fruits and vegetables!
We love this time of year as far as cooking goes. There are so many of the favorites in season right now!
Summer tomatoes are SO DELICIOUS and one of the favorite vegetables to grow. We planted three different tomato plants in our garden this year. There's nothing like a fresh tomato simply plucked off the vine!
And a great in-season summer fruit: peaches.
Peaches go so well with a variety of sweet and savory dishes. Like Peach and Bourbon Grilled Chicken. And in yummy desserts like Mini Pavlova Cakes with Strawberries, Peaches, and Cream.
Peach Tomato Salad
Together, the sweetness of peaches and the savory qualities of fresh tomatoes go hand in hand. Both are juicy healthy ingredients that are perfect in summer salads.
It's so simple to put together this dish. And it's a tasty one to serve whether it's simply you and your family, or whether you're having a couple of friends over.
What do you need to make this salad?
Peaches– We prefer to use yellow peaches. These standard peaches are super juicy, acidic, and sweet. Perfect for salads or snacking! You could use the white peach variety if you prefer, but it will definitely give this salad a completely different flavor.
Tomatoes – Roma tomatoes are the favorite, but you could use San Marzano tomatoes, cherry tomatoes, beefsteak tomatoes… You could even use a combination of red and yellow tomatoes if you'd like. Simply be sure to take out the seeds before adding the tomatoes or else the salad could become mushy fast.
Corn – you can use fresh corn on the cob. Or, to make this salad even faster, thaw out frozen corn and warm it up to your liking. Simply be sure it's at room temperature or cooler before adding the corn to the salad. If it's too hot, it will wilt the arugula and turn the tomatoes and peaches to mush.
Baby Arugula – the peppery flavor of arugula is a nice contrast to the sweetness of the corn and peaches.
Feta Cheese – Or, if you're dairy-free like me, you could use these dairy-free feta-style crumbles.
Ingredients for a honey vinaigrette – this salad is so fresh and flavorful, it only needs a light drizzle. This light honey vinaigrette is simple to make with simply balsamic vinegar, olive oil, honey, salt and pepper.
Red Onion – We include red onion in the recipe because We like the bit of tangy acidity it adds to this dish. However, it's definitely an ingredient that you could leave out if you prefer.
What wine pairs well with this salad?
Pair this summery salad with an aromatic Viognier.
This medium-bodied white wine has stone fruit and citrus aromas, with flavors of peach, nectarine, and honeysuckle on the palate. It matches well with the stone fruit components in this salad.
While this Dobbes Family Estate Viognier is a little tricky to find these days, it's a fabulous match for this dish. You can find other vintages of this wine on Wine.com or other online wine shops. And you can still shop for other white wines, rosé wines, red wines, and a bubbly from Dobbes Family Estate online!
