Homemade Bacon Jam on Crostini

My culinary passions are well-documented, with a particular fondness for two distinct pleasures: the rich, smoky allure of bacon and the complex, nuanced elegance of fine wine. While many believe that bacon enhances nearly everything, finding the perfect wine pairing for its unique profile can sometimes be a delightful challenge. Not every wine harmonizes with the beloved “meat candy,” but when the right match is found, it creates an unforgettable gastronomic experience.

One exceptional wine that stands out as a superb companion to the savory delights of bacon is Gallo Family Vineyards’ Hearty Burgundy. This classic red blend offers a character that beautifully complements the robust flavors of bacon, making it an ideal choice for a variety of dishes, especially our star creation today: homemade bacon jam.

Unveiling the Timeless Charm of Gallo Family Vineyards Hearty Burgundy

Recently, Gallo Family Vineyards celebrated a significant milestone: the 50th anniversary of its iconic red blend, Hearty Burgundy. This enduring classic was first introduced in 1964 by the visionary winemakers Ernest and Julio Gallo, who sought to create a wine reminiscent of the convivial, family-centered meals enjoyed in Italy. Their goal was a wine that embodied warmth, tradition, and robust flavor – a mission they unequivocally achieved with Hearty Burgundy.

Hearty Burgundy is celebrated for its fuller, medium-bodied profile, artfully crafted to showcase delicious dark berry and plum notes. What truly sets this wine apart is its remarkable balance. It gracefully avoids being overly oaky, nor does it lean too heavily into a purely fruity character. Instead, it occupies that coveted “just right” category, offering a harmonious blend that appeals to a wide range of palates. Each sip reveals a thoughtful depth, delivering a big, bold, and satisfying dark berry flavor that makes it a quintessential red wine for those who appreciate substance and character.

Gallo Hearty Burgundy Flavor Profile Description

Upon experiencing Hearty Burgundy for myself, it was immediately clear why the Gallo brothers held it in such high regard. Its inviting nature makes it an ideal wine for sharing with friends and family, fostering great conversation and hearty laughs. Its approachable yet complex character allows it to pair seamlessly with a variety of substantial, meaty meals. Imagine this wine alongside classic steak frites, a generous bowl of a rich Tri-Pepper Pasta, or a savory Sausage and Peppers dish. Its robust structure and fruit-forward notes beautifully complement these hearty flavors, making every bite and sip a true pleasure.

However, my intention for this particular occasion was to explore pairings that would excel in an entertaining setting. The 1.5-liter bottle size of Hearty Burgundy naturally lends itself to gatherings, making it the perfect choice for sharing with guests. With this in mind, my culinary focus quickly turned towards appetizers that would truly shine. Given my profound affection for bacon, the direction was clear: bacon-centric dishes. I decided to create two crowd-pleasing appetizers: my signature Bacon Jam and delectable Bacon Wrapped Dates Stuffed with Goat Cheese. And there was no need to wait for a special occasion like International Bacon Day; as luck would have it, I was hosting the next Bunco night, presenting the perfect opportunity to share these creations and test out their pairings with the Hearty Burgundy.

Mastering the Art of Homemade Bacon Jam

While the process of making jam might seem daunting, especially for busy individuals balancing work and family life, I assure you that crafting homemade bacon jam is surprisingly simple and immensely rewarding. Although it requires a bit of patience and time, the end result is unequivocally worth every minute. The rich, complex flavors achieved through slow cooking cannot be replicated, making this a truly special condiment. Below, you’ll find the full, detailed bacon jam recipe and instructions to guide you through each step.

The fundamental steps to creating this incredible bacon jam are straightforward, transforming humble ingredients into a gourmet spread. It begins with cooking the bacon in a skillet until it’s perfectly crisp. Once the bacon is rendered and removed, you’ll utilize a small amount of the flavorful bacon fat to sauté chopped onions and minced garlic. This crucial step involves gently scraping up all the delicious, browned bits from the bottom of the pan – a process known as deglazing – which infuses the jam with even deeper flavor. Next, the cider vinegar, maple syrup, and brown sugar are added to the pan, creating a sweet and tangy base, before the cooked bacon is returned to simmer briefly, allowing the flavors to meld.

The entire mixture is then transferred to a slow cooker, where it undergoes a transformation, cooking on high for 2 to 3 hours or on low for 4-5 hours. This slow, gentle cooking process allows the ingredients to break down, concentrate their flavors, and develop that signature jammy consistency. Finally, the mixture is blended in a food processor to achieve a smooth, spreadable texture, though you can adjust the blending time for a chunkier jam if preferred. These simple yet deliberate steps culminate in approximately 2.5 cups of incredibly flavorful and versatile Bacon Jam!

The beauty of homemade bacon jam lies not just in its ease of preparation but also in its incredible versatility. I served it beautifully with creamy goat cheese and thinly sliced baguette rounds, creating an elegant appetizer that was an instant hit. Beyond appetizers, the possibilities are endless. Spread it generously on toast for a decadent breakfast, use it as a flavorful condiment to elevate any sandwich or burger, or even smother it over grilled pork chops for a dinner that will impress. Stored in an airtight container in the refrigerator, this delightful jam will keep for several weeks, though its irresistible flavor often means it disappears much faster!

The Perfect Harmony: Hearty Burgundy Pairing with Bacon Jam

Bacon jam recipe wine pairing with Gallo Hearty Burgundy

The moment of truth arrived as I presented this savory appetizer alongside the Gallo Family Vineyards Hearty Burgundy. The pairing was, in my personal estimation, an absolute success. The rich, dark berry notes inherent in the Hearty Burgundy beautifully highlighted and complemented the inherent sweetness of the bacon jam, creating a delightful interplay of flavors on the palate. The wine’s bold character stood up perfectly to the smoky, sweet, and savory complexity of the jam, ensuring neither overwhelmed the other.

It’s important to remember that when it comes to wine pairings, individual preferences play a significant role. Trust your instincts and let your taste buds be your guide. Just as our perception of wines can vary, so too can our preferences for specific food and wine combinations. The best way to discover your perfect pairing is through enjoyable experimentation. I wholeheartedly encourage you to try this particular combination, as I found it to be utterly delicious and wonderfully balanced!

Homemade bacon jam is so easy to make!

Ingredients

  • 8 slices bacon
  • 1 cup chopped onions
  • 1 garlic clove, minced
  • 1/3 cup apple cider vinegar
  • 1/2 cup maple syrup
  • 1/2 cup packed light brown sugar

Instructions

  • Cook the bacon in a skillet until crispy. Remove the bacon and set aside, reserving one tablespoon of bacon fat in the skillet.
  • Add the chopped onions and minced garlic to the skillet with the reserved bacon fat. Sauté over medium heat, scraping up any delicious browned bits from the bottom of the pan until the onions are softened and translucent.
  • Then, add the apple cider vinegar, maple syrup, and brown sugar to the pan. Bring the mixture to a gentle simmer for 2-3 minutes, stirring to dissolve the sugar and combine the flavors. Return the cooked bacon to the pan and stir well.
  • Transfer the entire mixture from the skillet into a slow cooker. Cook on high for 2 to 3 hours, or on low for 4-5 hours, stirring occasionally, until the mixture is thick and jam-like.
  • Finally, carefully transfer the cooked mixture to a food processor and pulse until it reaches your desired consistency – smooth or slightly chunky. Serve immediately, or allow it to cool to room temperature before storing in an airtight container in the refrigerator.

Notes

Bacon jam will keep wonderfully in an airtight container in the refrigerator for up to 5-7 days.
