This Instant Pot Cashew Chicken dish is Paleo, Whole30, gluten-free and dairy-free – AND better than take-out!

Ingredients

  • 2 tablespoons sesame oil, divided
  • 1/2 cup coconut aminos
  • 3 tablespoons ketchup (sugar-free for a paleo/whole30 dish)
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon honey
  • 2 tablespoons garlic, minced
  • 1 tablespoon ginger, peeled and minced
  • 3 tablespoons arrowroot flour, divided
  • 1/2 teaspoon Five Spice Powder
  • 1.5 pounds boneless, skinless chicken breasts, cut into small 1″ pieces
  • 1/2 cup green pepper, chopped into small pieces
  • 1/4 cup carrots, julienned
  • 1/4 cup chicken stock
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon water
  • 1 cup cashews

Instructions

  1. In a large bowl, mix together 1 tbsp sesame oil, coconut aminos, ketchup, vinegar, honey, garlic, ginger, and Five Spice powder. Stir until well combined and set aside.

  2. In a large ziplock bag or another large bowl, combine 2 tbsp arrowroot flour with salt and pepper. Add the chicken pieces and shake or stir to coat evenly with the flour mixture.
  3. Turn your Instant Pot to the SAUTÉ setting, and add the remaining 1 tbsp sesame oil to the bottom of the pot. Once the oil is hot, add the flour-coated chicken and stir, searing evenly on all sides for 2-3 minutes. This step helps lock in flavor and texture.

  4. Pour the reserved sauce mixture over the chicken in the Instant Pot. Add the chopped green peppers and julienned carrots, then pour in the chicken stock. Give everything a good stir. Close the lid, ensure the valve is sealed, and set your Instant Pot to PRESSURE COOK (or MANUAL) for 10 minutes.
  5. While the chicken is cooking, prepare your thickening slurry. In a small bowl, combine the remaining 1 tbsp arrowroot flour with 2 tbsp water and stir well until the flour is completely dissolved and no lumps remain. This ensures a smooth sauce.
  6. Once the Instant Pot completes its cooking cycle, perform a Quick Release to depressurize the pot. Carefully open the lid once the valve is fully down and it’s safe to do so.
  7. Switch the Instant Pot back to the SAUTÉ setting. Add the dissolved arrowroot flour mixture into the pot and stir continuously into the sauce. Introduce the cashews and continue stirring until the sauce thickens to your desired consistency, which typically takes just about one to two minutes.
  8. Serve your delicious Instant Pot Cashew Chicken immediately. It pairs wonderfully with steamed white rice, cauliflower rice for a low-carb option, quinoa, or additional steamed vegetables. Garnish with fresh green onions or sesame seeds if desired.

I prepare this recipe in my 8-quart Instant Pot Duo, but it can also be made in a 6-quart pressure cooker. If using a 6-quart model, ensure you sauté the chicken in a single layer. If pieces overlap, sauté in two batches to ensure even searing.
