Servings: Approximately 36 biscotti

Ingredients:

  • 1-1/4 cups all-purpose flour
  • 1-1/4 cups wheat flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon all spice
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 egg white
  • 1/4 cup molasses
  • 3 tablespoons melted butter
  • 1/2 cup butterscotch chips
  • 8 ounces white chocolate, melted (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together the flours, sugar, baking powder, ginger, cinnamon, allspice, and salt.
  3. In another bowl, beat eggs, egg white, molasses, and melted butter until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Stir in butterscotch chips. Be careful not to overmix!
  6. Divide the dough in half and shape each half into a 12-inch long log, about 1/2 inch thick.
