Growing up in a household where rice was a staple at every meal, I developed a deep appreciation for hearty, satisfying dishes that pair perfectly with it. From spam fried rice for breakfast to chicken adobo for dinner, rice was always at the center of our family table. While those traditions hold a special place, today’s fast-paced lifestyle often leaves little time for leisurely cooking. As a busy parent myself, I’m constantly seeking out delicious, quick-cooking recipes that bring global flavors to our dinner table without requiring hours in the kitchen. This quest for efficiency is what led me to perfect this incredible Thai Peanut Curry.

What truly elevates this Thai Peanut Curry is the harmonious blend of its components. The fresh ginger provides a delightful zing, cutting through the richness and adding a vibrant freshness. Creative Ways to Serve Your Thai Peanut Curry

The beauty of this easy Asian dinner recipe extends beyond its simple preparation to its incredible adaptability in serving. The base of the curry itself is incredibly versatile, allowing you to tailor it to your preferences or whatever you have on hand.

Firstly, the protein choice is entirely up to you. This dish shines with tender chicken, savory pork, or succulent shrimp. For those embracing a plant-based diet, this curry can just as easily be made into a satisfying vegetarian dish. Simply omit the meat and boost the vegetable content with your favorite seasonal produce, making it a hearty and flavorful option for vegetarians and vegans alike. Tofu or tempeh can also be added for extra plant-based protein.

My personal favorite way to enjoy this comforting dish is to serve the rich Thai Peanut Curry with chicken over a bed of fluffy jasmine rice. The fragrant rice perfectly soaks up the creamy, nutty sauce, creating a truly comforting and complete meal. However, don’t limit yourself to rice! For a delightful alternative, consider serving it over a generous bowl of slippery rice noodles. This option offers a different textural experience and can be enjoyed as either a warm, hearty meal or a refreshing cold dish, making it versatile for any season. Both options are incredibly delicious and guaranteed to satisfy your cravings for authentic Thai flavors.

For an even more vibrant meal, you can also serve this curry with a side of steamed greens like bok choy or spinach, or a light cucumber salad to balance the richness. The possibilities are truly endless, allowing you to make this dish your own every time you prepare it.

This is an easy Asian dinner recipe perfect for busy weeknights. If you love Thai food, you will love this dish!

Ingredients

  • 2 tablespoons olive oil OR sesame oil
  • 1 tablespoon garlic, minced (about 2 cloves)
  • 1 tablespoon ginger, peeled and minced
  • 1 cup chopped slices of red pepper
  • 1/2 – 1 lb boneless pork chops, sliced thin and chopped into cubes OR boneless, skinless chicken thighs, chopped into cubes
  • 4 teaspoons Thai red curry paste
  • 4 tablespoons creamy peanut butter
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 can coconut milk (14 oz)
  • 1 cup water
  • 1/2 cup finely chopped peanuts
  • 1 can baby corn pieces (14 oz), cut further into 1″ pieces if necessary
  • Juice from one lime
  • Salt and pepper to taste
  • 1 tablespoon chopped chives
  • 1 tablespoon roughly chopped or ripped cilantro leaves

Instructions

  1. Heat the olive oil or sesame oil in a large saucepan over medium heat. Ensure the oil is shimmering but not smoking, creating the perfect base for your aromatics.
  2. Add the minced garlic and ginger to the hot oil. Sauté for 1-2 minutes, stirring constantly, until the garlic becomes fragrant and has softened. Be careful not to burn the garlic, as this can turn bitter.
  3. Add the pork (or chicken/shrimp) to the saucepan and cook until it has thoroughly browned on all sides, usually about 5 minutes. This searing step helps to lock in the flavors. Then, introduce the red peppers and continue to sauté for two more minutes, allowing them to slightly soften.

  4. Stir in the Thai red curry paste and creamy peanut butter. Mix well until they are fully incorporated with the meat and vegetables, forming a thick, aromatic base.
  5. Now, add the brown sugar, soy sauce, rich coconut milk, water, finely chopped peanuts, and the baby corn pieces.

  6. Mix all the ingredients thoroughly to combine. Bring the heat down to low-medium, then cover the saucepan and let it simmer gently for approximately 12-15 minutes, stirring occasionally to prevent sticking and ensure even cooking and flavor distribution.
  7. Increase the heat to medium-high and bring the curry to a rolling boil. Continue stirring occasionally. Cook until the sauce has visibly thickened to your desired consistency and the baby corn is tender-crisp.
  8. Remove from heat and stir in the fresh lime juice. The acidity from the lime brightens the entire dish and adds a crucial authentic Thai flavor.
  9. Taste the curry and adjust the seasoning with salt and pepper as needed. Remember, flavors can vary, so always taste and adjust.
  10. Garnish each serving generously with fresh green onions (chives) and vibrant cilantro, as desired. These fresh herbs add a final layer of flavor and a beautiful presentation.

Notes

This recipe is wonderfully adaptable: you can use pork, chicken, shrimp, or firm tofu as the protein for this dish, depending on your preference or what you have available.

If you prefer a spicier curry, feel free to increase the amount of Thai red curry paste. You can also kick up the heat further by adding some thinly sliced fresh red chilis (like bird’s eye chilies) or a pinch of red pepper flakes during cooking.

Chef’s Insights: Advanced Tips for Your Thai Peanut Curry

  • I personally prefer a very mild curry, which is reflected in this recipe. However, the beauty of homemade food is the ability to tailor it to your exact preferences. If you’re seeking a bolder, spicier kick, don’t hesitate to double the amount of Thai red curry paste. For an even more intense heat, consider adding a few thinly sliced bird’s eye chilies or a dash of chili oil during the cooking process. Remember to adjust gradually and taste as you go!
  • The importance of tasting your food throughout the cooking process cannot be overstated. Flavors evolve as ingredients meld, and what tastes perfect to one person might need a touch more seasoning for another. While I often find this curry perfectly seasoned, my husband sometimes adds a pinch more salt to his portion. This is your kitchen, so feel empowered to adjust salt and pepper to your personal preference.
  • This Thai Peanut Curry is a canvas for your favorite vegetables. It offers the perfect opportunity to boost your nutritional intake and add vibrant colors and textures. I adore broccoli, but I’m the sole enthusiast in my family. If you share my love, I wholeheartedly encourage you to add florets to your curry! Other fantastic additions include snap peas, sliced carrots, bamboo shoots, bell peppers of different colors, or even a handful of fresh spinach wilted in at the end. Just keep in mind that adding more vegetables will likely require a slight increase in both coconut milk and water to maintain the luscious consistency of the sauce.
  • As you might have gathered from my other recipes, I have a deep affection for fresh cilantro. Its bright, citrusy notes are, in my opinion, crucial for truly bringing out the authentic flavors of this Thai dish. It’s truly a wonderful finishing touch, adding freshness and a pop of color. However, if cilantro isn’t your favorite herb, you can certainly omit it entirely, or substitute it with fresh Thai basil or more green onions for a similar aromatic lift.
  • Storage and Reheating: Leftover Thai Peanut Curry stores beautifully in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm on the stovetop over medium-low heat, stirring occasionally. You might need to add a splash of water or coconut milk to loosen the sauce if it has thickened too much in the fridge.
  • Choosing Your Peanut Butter: Opt for a creamy, natural peanut butter that contains only peanuts and salt, or minimal added sugar. This ensures the authentic peanut flavor shines through without unwanted sweetness or additives.
