Seattle Wine and Food Experience: A Sparkling Celebration of Bubbles and Seafood
The Seattle Wine and Food Experience is a much-anticipated annual event, and the festivities begin with POP! Bubbles & Seafood, a truly special celebration. This pre-event sets the stage for the entire experience, offering a tantalizing taste of what’s to come. Let’s take a closer look at the 2016 POP! Bubbles & Seafood Event, a memorable evening filled with exquisite pairings and exciting entertainment.

During a trip to Seattle, Washington, I had the pleasure of attending the Seattle Wine and Food Experience, held at Seattle Center’s McCaw Hall in February 2016. This event is a highlight for food and wine enthusiasts alike. A comprehensive overview of the main event can be found in my previous SWFE preview post.
This article, however, focuses on a delicious fusion of Food Bliss, Wine Bliss, and Travel Bliss, offering a photo-filled journey through the Seattle Wine & Food Experience’s spectacular kick-off event: POP! Bubbles & Seafood. Get ready to dive into a world of sparkling wines, fresh seafood, and unforgettable moments.
Exploring the World of Sparkling Wines

As expected, the bubbly flowed freely and responsibly at the annual POP! Bubbles and Seafood event. The event showcased over 40 different sparkling wines from across the globe, including some truly exceptional Champagnes, delightful Italian Proseccos, crisp Spanish Cavas, elegant Alsatian Crémants, and much more. It was a fantastic opportunity to sample a wide variety of styles and discover new favorites. The sheer diversity of sparkling wines available was impressive, offering something for every palate.

The Seattle Wine and Food Experience also hosts its annual wine awards, and this year, Piper-Heidsieck non-vintage was honored with the prestigious Best of Show award. Prior to the event, I had the distinct pleasure of sampling this remarkable and well-balanced brut. I paired it with a homemade Poached Wild Alaskan Halibut with Tomato Peas Wine Sauce, and I can personally attest to its deservingness of this esteemed award. The Piper-Heidsieck Brut truly elevated the flavors of the halibut, creating a harmonious and unforgettable culinary experience.

One of my favorite new discoveries at the event was the Avissi Prosecco ($14) from the Trincheri Family Estates. This sparkling wine, grown in Italy’s Venetto region, boasts a delightful floral aroma and a crisp, clean taste. I was particularly impressed by its delicate bubbles and refreshing finish. The Avissi Prosecco proved to be a perfect complement to the seafood offerings at the event, making it a truly memorable experience. It’s definitely a bottle I’ll be seeking out again.

While I was thoroughly enjoying the sparkling wine offerings, I somehow missed the red wine room and the chocolate salon. I spent the entire event upstairs, immersed in the world of bubbles and seafood. Next year, I’ll definitely make it a point to explore those additional attractions. The Seattle Wine and Food Experience truly offers something for everyone, and I’m already looking forward to discovering new culinary delights in the future.
Savoring the Fresh Flavors of the Pacific Northwest
Sparkling wines are renowned for their compatibility with seafood, especially the fresh and flavorful seafood that the Pacific Northwest is known for. Sixteen of Seattle’s most talented chefs presented creative and stunning dishes designed to be enjoyed alongside the sparkling wines. Each dish was a work of art, showcasing the chefs’ creativity and expertise in pairing flavors.

One of the most visually striking dishes of the evening was the Tuna Poke with Mango, Pineapple, Wasabi Pudding, Avocado, and Lime, presented by Chef John Roberts of Savor/McCaw Hall. The vibrant colors and fresh ingredients made this dish a true feast for the eyes as well as the palate. The combination of sweet, savory, and spicy flavors created a truly unforgettable taste experience.

Another particularly inventive dish was the Salted Cod with Paddlefish Caviar and Sesame Crisp, prepared by Chef Stuart Lane of Spinasse and Artusi. The contrasting textures and flavors created a unique and satisfying culinary experience. The saltiness of the cod, the richness of the caviar, and the crunch of the sesame crisp combined to create a truly memorable dish.

Chef Bill Ranninger of Seattle’s renowned Duke’s Seafood & Chowder House served up a Kickin’ Wild Alaska Salmon with Basil Citrus Vinaigrette. The freshness of the salmon combined with the bright citrus flavors created a truly refreshing dish. One of my personal favorites was Tulio Chef Walter Pisano’s Scallop with Preserved Mushrooms and White Truffles. The earthy flavors of the mushrooms and truffles perfectly complemented the delicate sweetness of the scallop.

Also worth noting was the Alaskan Spot Prawn Crudo with Kumquat Nage, Pickled Radishes, and Chiogga Beet Relish, prepared by Chef Kevin Davis of Orfeo. The combination of sweet, sour, and savory flavors, along with the delicate texture of the spot prawn, made this dish a true standout. The presentation was also impeccable, showcasing the chef’s attention to detail.
A Thrilling Saber Competition
A new and exciting addition to this year’s Pop! Bubbles & Seafood event was a friendly saber competition. This provided plenty of laughs, adding a new dimension to the fun.
The contestants included:
- Chef Thierry Rautureau, also known as Chef in the Hat, owner of Loulay and Luc restaurants in Seattle
- Sommelier Jake Kosseff of Miller’s Guild
- Jeff Lindsay-Thorsen of RN74
- Leslie Kelly of All Recipes


Each contestant in the saber competition thoroughly entertained the crowd with their inventive attempts to saber bottles of champagne using a variety of unconventional tools. From an oyster shucker to a 007-esque bouquet of flowers concealing a knife, and even a butcher cleaver, each contestant brought his or her own unique style to the competition. This was undoubtedly the highlight of the event for me. It was incredibly fun to watch, and it added an exciting and interactive element to the evening. The energy in the room was electric as each contestant took their turn.

I managed to secure a spot up front to capture better photos, and the delightful surprise of being in the front row was getting extra champagne after each bottle was sabered. Bonus! It was a truly unforgettable experience, adding to the already celebratory atmosphere of the event.

In the end, while all the contestants deserved recognition for their showmanship and flair, Leslie Kelly, Senior Food Writer at All Recipes, was crowned the winner of the saber competition. Her technique and precision were truly impressive, earning her the coveted title.

Beyond the bubbly and the seafood, there was an oyster corner where attendees could enjoy freshly shucked oysters and meet Cynthia Nims, author of “Oysters: Recipes that Bring Home a Taste of the Sea.” Celebrity Cruises offered attendees the chance to win a 7-day Alaskan cruise, and a Click 98.9 photo booth provided a fun way to capture memories of the event. In addition to the wines, there were also several beer, cider, and spirits producers on hand to complement the diverse selection of beverages.
The Pop! Bubbles and Seafood event was a thoroughly enjoyable evening, and I highly recommend attending it next year if you are a fan of sparkling wines and Pacific Northwest seafood. The combination of exquisite food, delightful drinks, and exciting entertainment makes it an event not to be missed.
