Homemade almond croissants: a delightful treat.

Almond croissants, also known as “croissants aux amandes,” are a beloved
pastry found in cafes and bakeries worldwide. Their popularity stems from
the perfect harmony of flaky, buttery croissant layers, a sweet and
aromatic almond filling, and a satisfyingly crunchy almond topping.

They were once my absolute favorite treat at Starbucks, offering a delightful
escape with every bite.

However, much to my disappointment, Starbucks discontinued their perfect
almond croissants back in 2017. I was
so devastated! But, as I often do when a restaurant dish I
love disappears, I embarked on a mission to recreate it at home.

After several attempts and tweaks, I’ve perfected these semi-homemade almond
croissants, and I daresay they’re even better than the Starbucks version!
The secret? I like to load them up with more of that delectable Frangipane
almond paste filling than most bakeries would ever dare.

These almond croissants are the perfect addition to any breakfast or brunch
spread. Serve them warm alongside a steaming cup of coffee or your favorite
tea for a truly memorable experience.

Homemade almond croissants are easy to make and taste great!

If you’ve never experienced the joy of a croissant, you’re in for a real
treat! Croissants are a classic French pastry crafted from layers of dough
and butter, resulting in a uniquely flaky and buttery texture that melts in
your mouth. And almond croissants? They take this already amazing pastry to
a whole new level of deliciousness!

These homemade, flaky almond croissants are a delightful way to start any
day. Once you realize how easy they are to make at home, you’ll find yourself
whipping up batch after batch!

  • Easy to Make: This recipe utilizes store-bought plain
croissants, significantly reducing preparation time. The steps to create
the homemade almond cream filling and optional syrup are straightforward
and easy to follow. Step-by-step photos are included below for your
    reference.
  • Bakery-Quality Results: These almond croissants boast the
same impressive appearance as those found in your favorite local bakery.
And, in my humble opinion, they taste just as delicious – if not even
more so! – than the ones you’d find in a traditional French bakery.
  • Layers of Flavor: Starting with traditional croissants as
the base, the flaky layers are generously coated with homemade creamy almond
filling, then topped with a satisfyingly crunchy layer of almond slices.
It’s a symphony of textures and flavors in every single bite!
  • Budget-Friendly: Let’s be honest: almond croissants from
your local bakery can be quite expensive. Making a batch at home not only
satisfies your cravings but also saves you a considerable amount of money.

An array of ingredients required for making almond croissants, including croissants, almond flour, sugar, butter, and extracts.
The key ingredients for making delicious almond croissants.

For the Croissants:

  • Croissants: This recipe is perfect for using day-old or
even stale croissants. Don’t throw those leftover pastries away! I often
purchase a large batch of flaky croissants from Costco specifically for
this recipe. They are perfect for this recipe.
  • Almond Flour: The almond filling’s primary ingredient is
almond flour, which provides a rich and authentic almond flavor.
  • Sugar: Granulated white sugar provides the perfect amount
of sweetness to complement the almond flavor.
  • Butter: Ensure that the butter is softened to room
temperature to achieve a smooth and consistent texture when combined with
    the sugar.
  • Eggs: You’ll need two eggs for the frangipane filling,
adding richness and binding the ingredients together.
  • Flour: A small amount of all-purpose flour helps to
thicken the frangipane filling, ensuring a perfect consistency.
  • Vanilla & Almond Extract: The combination of vanilla and
almond extract adds a wonderful depth of flavor to the filling. The almond
extract, in particular, provides that warm, classic bakery aroma that’s
    irresistible.

For the Syrup (Optional):

  • Water
  • Granulated Sugar
  • Vanilla Extract

For the Toppings:

  • Powdered Sugar
  • Sliced Almonds
