Celebrating California Avocado Month: A Culinary Journey and Delicious Discoveries

As a food blogger, I’m always seeking out new and exciting culinary experiences. I love being challenged and discovering innovative ways to enjoy food and beverages. Whether it’s a chef pushing culinary boundaries, a winemaker crafting exceptional vintages, or a food artisan redefining traditions, I’m eager to share these discoveries with you.

When the California Avocado Commission extended an invitation to a media dinner at Mother’s Bistro to celebrate California Avocado Month in June, I was initially hesitant. Mother’s Bistro holds a special place in my heart, but avocados… not so much. For most of my life, I harbored a strong aversion to avocados. There wasn’t a specific incident that triggered this dislike, perhaps it was the texture, or maybe growing up in Oregon, where avocados aren’t locally grown, played a part.

However, everything changed last year when I tasted truly exceptional guacamole. As we joked about over dinner at Mother’s Bistro, guacamole often acts as the gateway to a lifelong appreciation for avocados. I’ve officially become a convert, and I’m perfectly fine with that because it’s opened up a whole new world of culinary possibilities.

I arrived at the dinner with limited avocado knowledge, a newfound curiosity, and a desire to learn how to incorporate avocados into everyday dishes. Whether you’re a long-time avocado enthusiast or still a skeptic, I believe you’ll find inspiration in the dishes created by Chef Lisa Schroeder.

California Avocado Month: A Celebration of Flavor and Versatility

California is responsible for producing approximately 90% of the nation’s avocado crop, making June the perfect time to celebrate California Avocado Month. The California Avocado Commission partners with chefs across the country to highlight the incredible versatility of this fruit. I was particularly excited to experience the specially curated menu that Chef Lisa Schroeder of Mother’s Bistro had prepared for the local media dinner. The entire evening promised a delightful exploration of flavors, textures, and innovative avocado preparations.

Avocado Hors D’Oeuvres: Delicious Bites to Begin the Evening

The evening began with a selection of passed hors d’oeuvres. The Guacamole-Filled Cherry Tomatoes were both adorable and incredibly tasty. They are a fantastic and simple idea for party appetizers if you’re planning any summer gatherings. The burst of flavor from the tomatoes combined perfectly with the creamy, rich guacamole. This is one I’ll be replicating at home for sure!

My personal favorite avocado dish of the evening was the Avocado, Pink Grapefruit, and Dungeness Crab Cocktail. I honestly could have devoured an entire bowl of this! The vegetarian version is pictured below, but the full version with Dungeness crab was an absolute triumph of textures and flavors. It was a delightful combination of sweet, savory, and slightly tart notes – a perfectly balanced delight with every single bite. The freshness of the grapefruit and crab complimented the richness of the avocado flawlessly.

After we were seated, we received a warm welcome from Jan DeLyser, the VP of Marketing for the California Avocado Commission. She spoke passionately about the avocado industry and the commission’s efforts to promote this wonderful fruit.

I particularly enjoyed the story she shared about the original Hass Mother Tree, the California-grown tree from which all Hass avocados originate. It’s a fascinating piece of history, and you can read the complete story on the California Avocado Commission website. The story adds a layer of appreciation to every avocado enjoyed.

Mastering the Art of Avocado Cutting: Tips and Techniques

Next, Chef Lisa Schroeder of Mother’s Bistro provided a demonstration on how to prepare the Avocado, Pink Grapefruit, and Dungeness Crab Cocktail (I’m already planning to recreate this at home!). She also demonstrated two different techniques for efficiently and safely cutting an avocado.

This is essential knowledge, my friends! Proper avocado cutting prevents injuries and ensures you get the most out of this delicious fruit. Whether you prefer slicing or dicing, mastering the basics will enhance your avocado experience.

I also own an OXO avocado slicer, but I haven’t had a chance to use it yet. I’m curious to see how it compares to the traditional knife method.

Salads: Fresh and Flavorful Avocado Creations

Following Chef Schroeder’s entertaining, informative, and thoroughly charming demonstration, it was time to indulge in the rest of the meal. The anticipation had been building, and I was eager to sample the avocado-infused creations.

For the salad course, I particularly enjoyed the Butter Lettuce, Avocado, and Green Onion Salad with Lemon Vinaigrette. The simplicity of this salad allowed the flavors of the individual ingredients to truly shine.

I loved the delicate, buttery textures and flavors of the lettuce and avocado, perfectly complemented by the bright and zesty lemon vinaigrette. This is definitely a salad I will be recreating at home. It’s a light, refreshing and healthy option for any meal.

Main Course: Avocado Takes Center Stage

The entree featured Grilled Chicken Breast with sauteed onions and peppers, generously topped with avocado and salsa. It was served with “Macaroni & Cheese” (Mother’s Bistro’s playful quotation marks, not mine!), a decadent creation with bacon, avocado, tomatoes, and cheddar cheese, finished with cojita cheese and green onions.

While the chicken was expertly grilled and flavorful, it was the “macaroni and cheese” that truly stole the show. The combination of bacon, cojita cheese, and creamy avocado worked incredibly well together. I’m already planning to make this for dinner at home! It would be a perfect dish for small dinner parties or even a satisfying meal just for myself. The avocado adds a unique richness and texture to a classic comfort food.

Avocado Lime Pie: A Sweet and Surprising Finale

Finally, we arrived at the grand finale: Avocado Lime Pie. I had been eagerly anticipating this dessert all evening and had consciously paced myself throughout the meal to ensure I had room to fully enjoy it.

The photo really doesn’t do the dessert justice; it was absolutely delicious. The fresh Oregon strawberries were perfectly ripe and sweet, providing a beautiful contrast to the tangy avocado lime pie filling and the buttery graham cracker crust. On a normal evening, I could have easily devoured the entire pie, but given the abundance of delicious food throughout the meal, I was quite full by the halfway point. I savored every bite that I could manage!

I’m now incredibly excited to experiment with avocados in desserts. I love that it pairs so well with lime, but I’ve also heard that avocados are a fantastic way to add a creamy texture to chocolate cookies and cakes. Simple Tips for Incorporating Avocados into Your Home Cooking

The evening was a wonderful opportunity to learn more about avocados and gain inspiration for incorporating them into my own cooking and baking. Here are some additional ways to use avocados in your home kitchen:

  • Substitute avocado for butter or shortening in your baked goods. This not only enhances the nutritional value, thanks to the fruit’s many vitamins and nutrients, but also reduces fat, sodium, and calories.
  • Puree avocado into your morning smoothies for a creamy and healthy boost.
  • Add sliced avocado to your breakfast omelets or replace the Canadian bacon in Eggs Benedict for a healthier twist. Avocados are nutrient-rich, with one-fifth of a medium avocado containing only 50 calories and nearly 20 essential vitamins, minerals, and phytonutrients.
  • Simply slice an avocado, sprinkle with sea salt, and enjoy it as a healthy and satisfying snack. Avocados are naturally sodium and cholesterol-free, making them a “good” source of healthy fats.
