Pairing Beer with Game Day Food

Before we dive into the recipe, let’s talk about the perfect beverage pairing. Beer and football go hand in hand, but finding the right beer to complement your food can elevate the entire experience.

Pairing beer with food is similar to pairing wine. The key is to balance the flavors and textures of the beer and the food.

  • Light Beers (Lagers, Pilsners, Ciders): These crisp, refreshing beers are perfect with lighter appetizers like guacamole and chips, light cheeses, and spicy chicken wings. Their clean flavors won’t overpower delicate dishes.
  • Medium Beers (IPAs, Amber Ales): These versatile beers pair well with most typical football fare, including pizzas, wings, and ribs that have been grilled or slow-cooked. The hoppy bitterness of an IPA can cut through the richness of the food.
  • Dark Beers (Stouts, Porters): These rich, complex beers are a great match for chocolate desserts or hearty foods like smoked ribs. Their roasted flavors complement smoky and sweet dishes.

When in doubt, an IPA is always a safe bet. The bright acidity and hoppy character of IPAs tend to balance out the richness of football food, making them a great all-around choice.

Now that we’ve covered the beer, let’s get to the main event: the fully loaded, ridiculously yummy nachos! These aren’t your average nachos. They’re a flavor explosion in every bite, thanks to the combination of tender pulled pork, crispy tortilla chips, and all the best toppings.

I recently made these nachos for an NFL party at my house, and they were a huge hit! Everyone loved the combination of textures and flavors. The hearty pulled pork, the crunchy chips, and the fresh toppings created a truly unforgettable dish.

These nachos have something for everyone: crispy tortilla chips, juicy pulled pork made in the slow cooker, fresh herbs, and a touch of saltiness from the black olives. You can customize them to your liking by adding your favorite toppings, such as jalapeños, cheese, or sour cream.

In the photos, you’ll notice that I left out the cheese this time. However, for fully loaded nachos, I’ve included directions on when and how to add shredded cheddar cheese (or a dairy-free alternative) in the recipe below.

And don’t forget the sides! Salsa and sour cream are the perfect accompaniments to these nachos, adding a cool and refreshing contrast to the rich and savory flavors.

With these Slow Cooker Pulled Pork Nachos, you’ll be fully loaded and ready to go for the playoffs! Plus, this recipe is perfect for any gathering, whether it’s a game-day party, a family barbecue, or a casual get-together with friends.

Slow Cooker Pulled Pork Nachos Recipe

Ingredients

Slow Cooker Pulled Pork

  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 tablespoon packed light brown sugar
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2-3 pound boneless pork shoulder, cut into cubes
  • 2 cups BBQ sauce, homemade or your favorite store-bought variety

Nachos

  • 1 bag of tortilla chips
  • 1 6-ounce can of sliced black olives
  • ¼ cup finely diced red onion
  • 1 tablespoon finely chopped green onions
  • Optional: 1 6-ounce can diced jalapeños
  • Optional: 1 cup shredded sharp cheddar cheese, or dairy-free cheese alternative
  • Garnish: 2 tablespoons chopped cilantro OR chopped parsley
  • Salsa
  • Sour cream

Instructions

Make the Slow Cooker Pulled Pork

  1. Lay out the onions and garlic evenly throughout the bottom of the slow cooker.
  2. Pour the chicken broth into the slow cooker.
  3. In a small bowl, combine the brown sugar, chili powder, cumin, cinnamon, and salt until fully blended.
  4. Rub the spice blend all over the pork cubes, then place the pork on top of the onions and garlic in the slow cooker.
  5. Cook on high for 5-7 hours, or on low for 7-9 hours.
  6. When the pork is cooked, it will come apart easily with two forks. Turn off the slow cooker and drain out the liquids over a strainer in a sink.
  7. Using two forks, pull apart the pork in the slow cooker until all of the pork is shredded.
  8. Pour in your homemade BBQ sauce or the BBQ sauce of your choice over the pork and mix together until all of the pork is fully coated. Add more sauce as needed.

Assemble the Nachos

  1. Preheat the oven to 325 degrees Fahrenheit (160 degrees Celsius).
  2. On an oven-safe large platter or a rimmed baking sheet, spread out the tortilla chips into one layer, with chips overlapping.
  3. Take spoonfuls of the BBQ pulled pork and spread evenly over the tortilla chips.
  4. Sprinkle red onions evenly over the nachos, then sprinkle the black olives and the green onions. If you are using diced jalapeños, now is the time to add those to the mix.
  5. Then, if you’d like, top with cheddar cheese or a dairy-free cheese alternative.
  6. Place the oven-safe platter or rimmed baking sheet of nachos into the oven for just a couple of minutes, just until the cheese melts. Remove from the oven and garnish with chopped cilantro or chopped parsley.
  7. Serve immediately with a side of salsa and sour cream.
  8. Eat up and enjoy the deliciousness!
