Plaza del Toro proved to be an ideal venue for the Malbec & Mushrooms Cook-Off for a Cause. This exclusive charity event brought together Chef Dustin Koerner of Andina, Chef Chris Carriker of Bluehour, and Chef Carrie Merrill of John Gorham Restaurants, all eager to showcase their culinary talents.

Each chef was challenged to craft innovative mushroom recipes that would beautifully enhance the flavors of the 2013 Catena Malbec. The chef whose dish received the highest accolades would receive a generous $3,000 donation to their chosen charity, while second and third place would be awarded $2,000 and $1,000, respectively, for their selected causes. The event was fueled by passion, creativity, and a shared commitment to giving back to the community.

The Catena family has been crafting exceptional wines in Argentina since 1902, when Nicola Catena first planted his Malbec vineyard. Today, Nicola’s granddaughter, Dr. Laura Catena, continues the family’s legacy, pushing the boundaries of winemaking while honoring their rich history. Meeting her at the event was a true privilege, offering a unique opportunity to learn more about her family’s remarkable wines.

Catena Malbec is an absolute delight when paired with robust, earthy dishes like those featuring mushrooms. Its deep garnet color hints at the explosion of fruit flavors within, leading to a silky-smooth finish that lingers on the palate. This wine is well-suited for special occasion meals, standing up beautifully to dishes such as duck, rib-eye steak, or rack of lamb. Chef Dustin Koerner of Andina crafted a Carapulcra con Puerco, a dish featuring braised pork sirloin, chicharron, Carapulcra stew, watercress and citrus salad, and a chanterelle and lobster mushroom conserva. The combination of textures and flavors was a delight to the senses, and the dish paired exceptionally well with the Malbec’s robust profile.

Chef Koerner’s dish was awarded second place, resulting in a $2,000 donation in his name to his chosen charity, the Hacienda CDC. His dedication to both culinary excellence and community support was truly inspiring.

While this blog typically features original recipes, it felt incomplete to showcase these beautiful dishes without sharing at least one of the recipes. Therefore, with the generosity of Chef Carrie Merrill, I’m delighted to share the recipe for the brulee component of her winning Trio of Candy Cap Mushrooms dish.

This recipe requires a kitchen scale for precise measurements. When paired with Catena Malbec, this brulee could be the perfect Valentine’s Day dessert to impress your loved one. Its unique flavor and elegant presentation are sure to make a lasting impression.

Candy Cap Mushrooms Brulee Recipe

This winning recipe looks fancy and tastes amazing! It won the Catena Mushrooms Cook Off for a Cause event in Portland, Oregon.

Ingredients:

  • 28 grams Dehydrated Candy Cap Mushrooms
  • 330 grams Milk
  • 670 grams Heavy Cream
  • 190 grams Granulated Sugar
  • 300 grams Egg Yolk

Instructions:

  1. Bring Candy Cap Mushrooms and milk to a boil, turn off and let steep for 1 hour, then strain mushrooms.
  2. In the meantime, measure out heavy cream in a medium-sized container.
  3. Combine sugar and yolks together and set aside.
  4. Once the mushrooms are strained out, bring the milk back up to a boil.
  5. Temper hot milk in the yolk mixture, then strain into the heavy cream.
  6. Pour into dishes and bake at 200°F (93°C) on a shallow sheet tray with a little bit of water for steam.
  7. Bake until brulee moves in one solid mass.
