I’ve always been captivated by the way a well-chosen wine can enhance the dining experience. It’s not just about the individual flavors; it’s about how they interact and create a harmonious whole. A Memorable Mushroom and Wine Pairing Luncheon in Portland

Recently, I had the distinct pleasure of attending a specially curated wine and mushroom pairing luncheon in Portland, Oregon. This culinary event was hosted at the renowned Irving Street Kitchen, in collaboration with the esteemed Knudsen Vineyards and Ostrom’s Mushrooms. It was an unforgettable experience that deepened my appreciation for the nuances of mushroom and wine pairings.

As a devoted mushroom enthusiast, I frequently incorporate these versatile fungi into my home cooking. I love creating classic mushroom dishes and sharing the recipes. Some of my favorite recipes include Herb Stuffed Mushrooms, Pork & Pasta with Mushroom Herb Sauce, Butternut Squash & Mushroom Sage Hand Pies, Chicken Marsala, and Bacon Mushroom Quiche. The possibilities are truly endless when it comes to cooking with mushrooms.

However, the dishes prepared by Chef Sarah Schafer and her talented team at Irving Street Kitchen took mushroom cuisine to a whole new level. They crafted a series of exquisite and inventive dishes, each designed to perfectly complement the wines being served. It was a masterclass in culinary creativity.

Upon arrival, we were greeted with a glass of Argyle Brut, a remarkable Oregon sparkling wine. This is a personal favorite of mine and a bottle that I highly recommend. What made it even more special was knowing that it was made with grapes sourced directly from Knudsen Vineyard! It was the perfect way to kick off the luncheon and set the stage for the delicious pairings to come.

Shortly after the sparkling wine reception, we were presented with the first course. It was a truly stunning starter that showcased the versatility of mushrooms in unexpected ways.

Pairing Pinot Noir and Salmon with Mushrooms

The first dish of the mushroom wine pairing luncheon was a masterpiece of flavors and textures: Gravlax with Pickled Shiitake Tartar Sauce, Cucumber & Frisee, and Rye Crackers. This dish was an absolute triumph, and it perfectly demonstrated the potential of pairing mushrooms with both wine and seafood.

However, the real stroke of genius was the innovative use of shiitake mushrooms to create a unique “tartar sauce.” By finely dicing the mushrooms and infusing them with herbs and oil, Chef Schafer masterfully softened the mushroom’s inherent earthiness. The wine pairing selected for this exceptional salmon dish was a Chardonnay. We had the pleasure of savoring the 2014 Knudsen Vineyards Dundee Hills Chardonnay ($45/bottle). This Oregon Chardonnay is a truly elegant wine, boasting crisp green apple notes and a subtle, smooth vanilla flavor. Its complexity and balance made it a wonderful match for the gravlax, enhancing the overall dining experience.

Steak with Mushroom Sauce: A Hearty Pairing

The second course took us in a different direction, showcasing a more robust and familiar pairing: Charred Teres Major with a Portabello & Tomato Salad, featuring Ostrom’s Mushrooms Steak Sauce. This dish embodied the hearty, meaty flavors that many associate with mushrooms, while also incorporating lighter elements for balance.

While the steak was undeniably the star of the show, the Portabello & Tomato Salad and the creamy corn served alongside added a touch of brightness and freshness. The Ostrom’s Mushroom Steak Sauce tied everything together with its rich and savory flavor.

To further explore the nuances of Pinot Noir, this dish was served with a side-by-side tasting of two vintages: the 2013 Knudsen Vineyards Pinot Noir and the 2014 Knudsen Vineyards Pinot Noir. This allowed us to appreciate how even slight variations in the growing season can influence the character of a wine.

The 2013 Knudsen Vineyards Pinot Noir, unfortunately now sold out, was a particularly memorable wine. It possessed a richness and depth that set it apart from many Oregon Pinot Noirs. Its robust character allowed it to stand up to the hearty meat dish without being overpowering or too bold. It was a wine that I would have loved to pair with a Thanksgiving or Christmas meal.

In contrast, the 2014 Knudsen Vineyards Pinot Noir ($55/bottle) offered a lighter and more playful profile. With its bright berry notes, it proved to be a versatile pairing for the steak dish, complementing the flavors in a completely different way. Interestingly, I found myself particularly enjoying this wine with the dessert course, highlighting its adaptability.

Delightful Dessert and Wine Pairings

The final course of the luncheon was a testament to culinary innovation, showcasing the unexpected potential of mushrooms in sweet dishes. The main dessert was a Ginger Cheesecake with Maryhill Peache Mousse and Enoki Mushroom Crumble. This was a truly inspiring creation that challenged conventional notions of dessert ingredients.

Have you ever considered incorporating mushrooms into a dessert? Chef Schafer ingeniously transformed the mushrooms into a crumble, resembling crushed graham crackers, which served as a delightful base for the dish. Did you know that mushrooms are naturally loaded with Vitamin D? In fact, they are the only item in the produce aisle that naturally produces this essential vitamin! This is particularly beneficial for those of us living in the Pacific Northwest, where sunshine can be scarce. As someone with a Vitamin D deficiency, I am always eager to incorporate more mushrooms into my diet.

Furthermore, mushrooms are packed with B vitamins, which play a crucial role in breaking down proteins, fats, and carbohydrates, helping you feel energized. They are also bursting with selenium and ergothioneine, a powerful antioxidant that can help fight off colds and the flu.

In short, mushrooms are truly super fungi!

Tips for Keeping Mushrooms Fresh

To maximize the flavor and nutritional benefits of mushrooms, it’s important to store them properly. Here are a few helpful tips:

Shiitake Mushroom Fact: Shiitake mushrooms can stay fresh for up to 14 days when stored in a paper bag in the refrigerator. They are also an excellent source of niacin and riboflavin!

Portabello Mushroom Fact: These larger, meatier mushrooms are essentially just mature white crimini mushrooms. They will remain fresh for 7-10 days when stored in a paper bag in the refrigerator.

Enoki Mushroom Fact: Enoki mushrooms are visually striking, with long stems clustered together in a formation that resembles Sideshow Bob’s hair (from The Simpsons).
