What is a Quiche?

At its heart, a quiche is a timeless French savory egg tart, revered for its simple elegance and comforting flavors. Traditionally, it consists of a flaky pastry crust cradling a creamy, savory filling. This filling typically combines a rich mixture of eggs and cream (or milk), along with various other ingredients such as cheeses, meats, seafood, and fresh vegetables. The beauty of a quiche lies in its adaptability, allowing for endless creative variations.
The most famous rendition, Quiche Lorraine, originated in the Lorraine region of France during the 19th century. This classic features a humble yet irresistible combination of eggs, cream, and smoky bacon, setting the standard for many quiche recipes that followed. Over the centuries, quiche has evolved, moving beyond its traditional boundaries.
Today, you’ll find an array of delightful quiche recipes, from those featuring a delicate pastry crust to popular crustless versions that cater to different dietary preferences and culinary styles. Modern quiches often highlight seasonal ingredients, incorporating diverse seafood, premium meats, and a kaleidoscope of fresh vegetables. This evolution ensures that there’s a perfect quiche for every palate and every occasion, continually reinventing a beloved classic while retaining its comforting French charm.

🛒 Essential Ingredients for Your Salmon Quiche

Crafting this delightful seafood quiche requires just a few readily available ingredients, all of which can be easily sourced from your local grocery store. Here’s a detailed look at what you’ll need and some helpful tips for each:
- Pie Crust: The foundation of any great quiche! You have the freedom to choose your crust. For a truly homemade touch, consider my easy food processor pie dough recipe, which is perfectly suited for a quiche crust. Alternatively, to save time without sacrificing quality, a good quality store-bought pie crust from the refrigerated section of your grocery store works wonderfully. These typically come in packs of two, but you’ll only need one for this recipe.
- Salmon: This recipe shines with salmon, and you have several excellent options. To minimize prep time and maximize flavor, I highly recommend using smoked salmon. It comes pre-cooked and infuses the quiche with a distinct, rich flavor profile. If you have leftover cooked salmon, that’s another excellent choice. Canned salmon (drained well) also works in a pinch. For those who prefer, you can cook a fresh salmon fillet, flake it, and then incorporate it into the quiche.
- Eggs: We use 5 large eggs in this recipe. This quantity yields a quiche with a satisfyingly firm, yet creamy, texture that holds its shape beautifully when sliced. If you prefer a slightly softer, more moist quiche, you can reduce the egg count to four large eggs. My personal preference for a sturdier slice leads me to use five.
- Cheese: Shredded Mozzarella cheese is an excellent choice, contributing a lovely melty texture and mild richness that complements the salmon without overpowering it. Feel free to explore other cheese options (see notes below for suggestions) to tailor the flavor to your liking.
- Vegetables: Spring vegetables are the stars here! Leeks and asparagus are a classic pairing with salmon, offering delicate flavors and tender textures. Be sure to consult the FAQs section below for detailed instructions on how to properly slice and clean leeks to remove any hidden dirt. For an added nutritional boost and a pop of color, I love to incorporate fresh spinach. You’ll also need one clove of garlic to enhance the savory notes, but if you’re a garlic enthusiast, feel free to double it!
- Seasonings: Freshly chopped dill is indispensable here, lending a bright, herbaceous note that perfectly complements the salmon. Simple additions of kosher salt and freshly ground black pepper ensure every bite is perfectly seasoned.
- Butter: Unsalted butter is used to sauté the leeks and garlic, building a foundational layer of flavor for the quiche filling.
Other Ingredient Ideas and Substitutions:
- For alternate vegetables, consider sweet spring peas, thinly sliced kale (sautéed slightly), or small broccoli florets. Remember to maintain similar portion sizes to avoid overfilling your quiche and impacting its baking time.
- This recipe can easily be made dairy-free by substituting heavy cream with a dairy-free heavy cream alternative, using your favorite dairy-free shredded cheese, and opting for vegan butter. I’ve personally made this variation, and it’s equally delicious!
- If heavy cream isn’t available or preferred, you can effectively substitute whole milk or half-and-half for a slightly lighter, yet still creamy, quiche.
- Don’t have leeks or prefer not to use them? Sliced yellow onions or delicate shallots make excellent substitutes, offering similar aromatic qualities.
- Beyond Mozzarella, a variety of cheeses work beautifully in this salmon quiche. Consider using robust Swiss cheese, nutty Gruyere cheese, sharp cheddar cheese, or even a blend of your favorites. For a gourmet touch, you could even create a delightful goat cheese quiche!
✅ Step-by-Step Guide to Making Salmon Quiche
Below, you’ll find comprehensive, step-by-step instructions accompanied by helpful photos to guide you through the process of making this exquisite Salmon Quiche. A full list of ingredients with precise measurements is available in the printable recipe card at the very end of this post.
First, preheat your oven to 350°F (175°C).

- **Prepare the Pie Pan:** Begin by lightly spraying a 9-inch or 8-inch pie pan with baking spray, or generously grease it with unsalted butter. This step ensures your quiche won’t stick and will release easily after baking.
- **Blind Bake the Crust:** Gently unroll or press your chosen pie crust into the bottom and up the sides of the prepared pan. If you notice any small cracks or holes forming in the dough, simply press the edges together with your fingers until they seal. It’s crucial to pre-bake (or blind bake) the crust on its own first. Bake it at 350°F (175°C) for approximately 10-15 minutes, or until the crust is lightly golden and baked through. This prevents a soggy bottom later on. Once baked, remove the crust from the oven and set it aside to cool slightly.
- **Sauté Aromatics:** While the crust is pre-baking, heat a large skillet over medium-high heat. Add the unsalted butter and allow it to melt and shimmer.

- **Cook Leeks and Garlic:** Once the butter is melted and hot, add the minced garlic and thinly sliced leeks to the skillet. Stir continuously and sauté for just 1 minute until fragrant and slightly softened.
- **Add Asparagus:** Now, add the sliced asparagus pieces to the pan with the leeks and garlic. Continue to sauté for another 1 to 2 minutes, just until the asparagus begins to soften slightly and turns a vibrant green. We’re aiming for a tender-crisp texture, not mushy. Turn off the heat and allow the sautéed vegetables to cool slightly in the pan.

- **Prepare the Egg Mixture:** In a large mixing bowl, crack the 5 large eggs. Add the heavy cream, shredded Mozzarella cheese, fresh baby spinach, chopped fresh dill, kosher salt, and ground black pepper.
- **Whisk the Filling:** Vigorously whisk all the ingredients together until the egg mixture is smooth, well combined, and slightly frothy. Ensure no streaks of egg yolk or white remain, as this creates a consistent texture in your baked quiche.

- **Combine Vegetables with Egg Mixture:** Add the slightly cooled, sautéed asparagus, leeks, and garlic from the skillet into the bowl with the whisked egg mixture. Stir gently to ensure the vegetables are evenly distributed throughout the filling.
- **Layer the Salmon:** Take your pre-baked pie crust. Arrange about two-thirds of the smoked salmon pieces in an even layer across the bottom of the crust. This ensures a delightful salmon flavor in every bite. Reserve the remaining salmon pieces for topping.
- **Pour the Filling:** Carefully pour the prepared egg and vegetable mixture over the smoked salmon pieces in the pie crust. Gently spread the filling if needed to ensure it’s evenly distributed.

- **Final Touches and Bake:** Spread the vegetables evenly within the quiche filling using a spoon or spatula. Then, artfully arrange the remaining smoked salmon pieces on top of the quiche, ensuring some salmon is visible around the entire surface. This makes for a beautiful presentation.
- **Bake:** Place the pie pan into your preheated oven at 350°F (175°C) and bake for 45-55 minutes. The quiche is perfectly baked when the center is set (a slight wobble is okay, as it will firm up upon cooling) and a toothpick or small butter knife inserted into the center comes out mostly clean. The pie crust edges should be beautifully golden brown.
- **Cool and Serve:** Once baked, remove the quiche from the oven and allow it to rest in the pan for at least 10-15 minutes before slicing and serving. This crucial resting time allows the egg custard to fully set and firm up, making for clean, effortless slices.
👩🏻🍳 Frequently Asked Questions About Salmon Quiche

Leeks are wonderful but can hide a surprising amount of dirt! To prepare them effectively: First, trim off and discard the fibrous root ends. Next, slice off the dark green tough tops and set them aside for another use (they’re great for making vegetable stock!). For this recipe, we’ll only use the white and light green portions. Slice the white part of the leek in half lengthwise, then thinly slice those halves into delicate half-moon shapes. Finally, place all the sliced leeks into a colander and rinse them thoroughly under cold running water, separating the layers with your fingers to ensure all grit and dirt are washed away. Drain them well before adding them to your pan.
Yes, absolutely! Please trust this vital step. Quiche fillings are inherently very wet and, once poured into the crust, quite heavy. Without proper pre-baking (also known as blind baking), your beautiful quiche will most likely suffer from a “soggy bottom” – a common culinary mishap, as any fan of The Great British Bake-Off will tell you! Blind baking ensures the crust is firm and fully cooked, providing a sturdy, flaky base that can perfectly support the rich filling, guaranteeing a delightful texture from top to bottom.
Once your quiche has completely cooled to room temperature, wrap it tightly in plastic wrap or transfer individual slices to an airtight container. Store it in the refrigerator, where it will remain fresh and delicious for up to 3 to 4 days. While it’s still wonderful after a few days, quiche is generally at its peak flavor and texture within a day or two of baking.
Indeed, you can! This Salmon Quiche is an excellent freezer-friendly dish, perfect for meal prepping. After the baked quiche has cooled completely, wrap it securely in several layers of aluminum foil, then place it into a freezer-safe bag or an airtight container. Don’t forget to label it with the date of freezing! It can be safely frozen for up to 3 months. To reheat, thaw overnight in the refrigerator, then warm in a preheated oven at 300°F (150°C) until heated through.

🍷 🥂 Perfect Wine Pairings for Salmon Quiche
To truly complement the delicate flavors of this Salmon Quiche, opt for wines that offer crispness and brightness, especially those typically enjoyed during brunch or lighter meals. Here are some fantastic suggestions:
- Rosé or Sparkling Rosé: The vibrant fruit notes and refreshing acidity of a good rosé, particularly a sparkling one, beautifully cut through the richness of the quiche and harmonize with the salmon.
- Sparkling Wine or Champagne: Bubbles are always a festive choice! A dry brut sparkling wine or Champagne offers a refreshing palate cleanser and its effervescence adds a celebratory touch.
- Crisp Sauvignon Blanc: Known for its zesty acidity and notes of citrus, green apple, and sometimes a hint of herbaceousness, a crisp Sauvignon Blanc is an excellent match for the asparagus and dill in the quiche, while still pairing well with the salmon.
🍳 Essential Kitchen Tools and Equipment

Ready to bake this delicious Salmon Quiche? Having the right tools on hand will make the process smooth and enjoyable. Here’s a list of the key kitchen equipment you’ll need:
- Pie Pan or Tart Pan: While a standard 9-inch pie pan works perfectly, for a truly professional presentation and effortless serving, I highly recommend using a pie pan or a tart pan with a removable bottom. This design allows you to easily lift the entire quiche out of the pan in one perfect piece, making slicing and plating a breeze while preserving those classic crimped edges. A springform pan can also be used, though it won’t yield the traditional fluted crust edge.
- **Large Skillet:** Essential for sautéing the leeks, garlic, and asparagus to build the foundational flavors of your quiche filling.
- **Large Mixing Bowl:** For whisking together the eggs, cream, cheese, and seasonings, and combining with the sautéed vegetables.
- **Whisk:** To ensure your egg custard is perfectly smooth and evenly mixed.
- **Cutting Board and Knife:** For preparing the salmon and all your fresh vegetables.
- **Colander:** Indispensable for thoroughly rinsing the leeks and asparagus.

Remove from the oven and set aside.

Tips:
- Pre-baking the crust is important! This helps prevent a soggy bottom, as there is a lot of liquid that sets down on the crust.
- You can make this with four (4) large eggs if you prefer a lighter, fluffier quiche. Five (5) eggs will result in a slightly firmer quiche.
- If you find the edges of the pie crust start to brown too early, you can cover the edges with aluminum foil and continue baking.
Storage: allow the quiche to cool completely, then cover or place in an airtight container and store in the refrigerator for up to 5 days.
