- 1 can Rhubarb slices in strawberry juice , 1 can equals 2 cups of fruit. (Alternatively, use 1 cup fresh/frozen strawberries + 1 cup fresh/frozen rhubarb.)
- ¼ cup water
- 1 tsp lime juice
- 2 average sized fresh mint leaves (optional, for a refreshing twist)
- 8 ounces vanilla yogurt, To make it dairy-free, use your favorite non-dairy yogurt.

Instructions

Combine the canned fruit (or prepared fresh/frozen fruit), water, lime juice, and mint leaves (if using) in a blender. Blend on medium-high speed until the mixture is completely smooth and thoroughly combined.

Carefully pour the blended fruit mixture evenly into 6 popsicle molds. Be sure to leave about 1/2 inch of space at the top of each mold to allow for the mixture to expand slightly as it freezes.

Gently spoon about a tablespoon of vanilla yogurt into each popsicle mold. Use a small skewer or spoon handle to swirl the yogurt into the fruit mixture, creating a beautiful marbled effect. You can add more yogurt if desired, distributing it until it’s all used up.

To easily remove the frozen popsicles from their molds: you can either let them sit at room temperature for a few minutes until they slightly thaw and become easier to slide out, or gently run the molds under warm tap water for approximately 20 seconds each. This trick helps loosen the popsicle from the mold’s sides.
