The inherent benefits of using an Instant Pot truly make this sirloin tip roast recipe shine, offering a blend of convenience and quality that’s hard to beat.

Here are several compelling reasons why this sirloin tip roast recipe stands out:

  • **Unmatched Convenience with One-Pot Cooking:** Everything, from searing the meat to pressure cooking the roast and vegetables, happens directly in your Instant Pot. This not only significantly cuts down on active cooking time but also minimizes cleanup, leaving you with more time to enjoy your meal and less time scrubbing pots and pans. It’s a truly self-contained, full-meal solution.
  • **Accessible, Wholesome Ingredients:** This recipe prioritizes **simple ingredients** that are readily available at most grocery stores across the US. You won’t need to hunt for exotic spices or specialty items, making it an easy and practical choice for any home cook. The focus is on fresh, quality components that combine to create incredible flavor without unnecessary complexity.
  • **Flavorful Homemade Gravy:** One of the greatest advantages of cooking beef roast in the Instant Pot is the rich, savory drippings left behind. This recipe ingeniously utilizes these precious pan juices as the base for an incredibly delicious, thick gravy. This ensures that every drop of flavor is captured and served alongside your tender roast and perfectly cooked vegetables, elevating the entire dish.
  • **Generous Servings for Family & Leftovers:** Designed to feed 4 to 6 people generously, this recipe is ideal for family dinners or small gatherings. Plus, it often yields delicious leftovers, which are fantastic for meal prepping throughout the week. Enjoy slices of roast in sandwiches, wraps, or as a base for a quick stew.
  • **Tender & Juicy Results Every Time:** The high-pressure environment of the Instant Pot breaks down tough meat fibers quickly, ensuring that even leaner cuts like sirloin tip roast emerge incredibly tender and moist. Forget dry, tough roasts; this method guarantees a succulent experience.

đź›’ Ingredient Notes for Perfect Instant Pot Sirloin Tip Roast

Crafting a truly exceptional **Instant Pot Sirloin Tip Roast** begins with understanding your ingredients. Each component plays a crucial role in developing the deep, rich flavors and tender texture that define this comforting meal. Here’s a closer look at the key ingredients and some helpful tips for selection and preparation:

Beef Roast – The Star of the Show: For this recipe, we specifically use a sirloin tip roast. This cut is sometimes labeled as beef sirloin tip roast or round tip roast at the butcher or grocery store. It’s a wonderfully economical cut of beef, originating from the hindquarters of the cow. While it’s leaner than some other cuts, the Instant Pot’s pressure cooking method works wonders, transforming it into a remarkably tender and flavorful roast. If you have trouble locating sirloin tip roast, a beef chuck roast makes an excellent substitute. Chuck roast, known for its rich marbling, will also yield fantastic results, though it might be even more tender due to its higher fat content.

Potatoes – The Hearty Accompaniment: The choice of potato is important to prevent them from becoming overly mushy under high pressure. We recommend Russet potatoes for their starchy texture, which holds up well during pressure cooking. They absorb the savory broth beautifully. While Yukon Gold potatoes are delicious, they tend to become softer, which might not be ideal for this dish. Alternatively, you can use halved or quartered red potatoes, which also maintain a firmer texture and add a lovely pop of color to your one-pot meal.

Carrots – Adding Sweetness and Color: Carrots are a classic partner to beef roast, offering a natural sweetness and vibrant color. For this recipe, chop about 3-4 large carrots into 1-inch pieces. This size ensures they cook through evenly with the roast and potatoes without becoming too soft. As a convenient alternative, you can use approximately 1-2 cups of baby carrots; just ensure they are roughly similar in size for consistent cooking. Feel free to explore other root vegetables like parsnips or celery root for added depth of flavor and variety.

Olive Oil: Used for searing the beef and sautéing the aromatics, olive oil adds a subtle flavor and helps create that desirable brown crust on the meat, locking in juices.

Onions & Garlic: These aromatic powerhouses form the foundational flavor base of your roast. Diced small onion and minced garlic cloves contribute an irreplaceable depth and fragrance to the dish. Using fresh is always best for maximum impact.

Beef Broth: This is essential for both the pressure cooking process and the rich gravy. Opt for a high-quality, low-sodium beef broth to control the overall saltiness of your dish and ensure a robust beef flavor.

Worcestershire Sauce: A secret weapon for beef, Worcestershire sauce adds a complex layer of umami, tang, and savory depth. Just a couple of tablespoons can dramatically enhance the overall flavor profile of your roast and gravy.

Cornstarch: This simple ingredient is used to thicken the pan drippings into a silky-smooth, pourable gravy. It’s preferred over flour for its ability to create a glossy, lump-free sauce.

âś… Step-by-step instructions for Instant Pot Sirloin Tip Roast

  1. **Prepare the Beef:** Begin by generously seasoning the entire surface of the beef sirloin tip roast with kosher salt and ground black pepper. Ensure all sides are evenly coated. Place the seasoned beef on a plate and set it aside momentarily while you prepare the Instant Pot.
  2. **Sear the Roast for Flavor:** Turn your Instant Pot to the SAUTE mode. Add 2 tablespoons of olive oil to the inner pot and allow it to heat for about one minute until it shimmers slightly. Carefully place the seasoned beef into the hot pot. Sear the roast on all sides until a rich, golden-brown crust forms. This crucial step, known as browning, locks in moisture and develops deep, complex flavors that are essential for a truly delicious roast. Once evenly browned, remove the beef roast and transfer it back to the plate; set aside.

3. **Sauté Aromatics:** Add the remaining tablespoon of olive oil to the pot. Then, add the diced onions and minced garlic. Sauté for 1-2 minutes, stirring occasionally, until the onions soften and become translucent, and the garlic is fragrant. Be careful not to burn the garlic.

4. **Deglaze the Pot:** Press the CANCEL button to turn off the SAUTE mode. Pour in about ÂĽ cup of beef broth. Using a wooden spoon or a silicone spatula, carefully scrape up any browned bits that are stuck to the bottom of the pot. This process, known as deglazing, is crucial for two reasons: it prevents the dreaded “BURN” message from appearing during pressure cooking, and it incorporates all those delicious caramelized flavors back into your sauce.

5. **Position the Roast:** Carefully place a trivet or a silicone sling into the Instant Pot, directly over the sautéed garlic and onions. Then, gently place the seasoned and seared beef roast on top of the trivet or sling. This keeps the meat elevated from the liquid, allowing it to steam and cook evenly.

6. **Add Vegetables:** Arrange the chopped carrots and potatoes around and even on top of the roast within the pot. Ensure they are distributed as evenly as possible to cook uniformly.

7. **Add Liquids:** Pour in the remaining beef broth and the Worcestershire sauce. These liquids will create the steaming environment for pressure cooking and form the base for your delicious gravy.

8. **Pressure Cook the Roast:** Secure the lid onto the Instant Pot, making absolutely sure that the pressure release valve is set to the SEALING position. Select the PRESSURE COOK (or MANUAL) setting, set the temperature to HIGH, and set the cooking time to 15 minutes. The Instant Pot will take several minutes to come to pressure before the 15-minute countdown begins. Once the pressure cooking cycle is complete and the Instant Pot beeps, perform a Natural Release for 3 minutes. This means you do nothing and allow the pressure to decrease gradually. After 3 minutes, use tongs or oven mitts to very carefully perform a Quick Release by moving the pressure valve to the VENTING position. This will rapidly release the remaining steam. Once all pressure has been released, the float valve (pressure release pin) will drop down, indicating it’s safe to open the lid. Carefully twist the lid to remove it.

9. **Remove Roast & Prepare for Gravy:** Carefully remove the tender sirloin tip roast and cooked vegetables from the Instant Pot and transfer them to a serving platter. Cover loosely with foil to keep warm and allow the meat to rest while you prepare the gravy. Select SAUTE mode on your Instant Pot and add the cornstarch to the flavorful liquid remaining in the pot.

10. **Thicken the Gravy:** Vigorously whisk the cornstarch into the liquid in the pot, ensuring there are no clumps. Allow the mixture to come to a gentle boil while stirring continuously. As it heats, the gravy will begin to thicken to your desired consistency. Once the gravy has reached your preferred thickness, press CANCEL to turn off the SAUTE mode.

11. **Strain and Serve Gravy:** Using oven mitts, carefully remove the Instant Pot inner pot. Pour the gravy through a fine-mesh strainer into a heatproof bowl or a large measuring cup with a spout. The strainer will catch any solids, leaving you with a perfectly smooth, rich gravy. Discard any solids caught in the strainer. Transfer the strained liquid to a gravy boat or another attractive serving container. Serve this delectable gravy generously over slices of the sirloin tip roast and the accompanying vegetables. Enjoy your complete, flavorful meal!

👩🏻‍🍳 Recipe FAQs: Instant Pot Sirloin Tip Roast

Sliced sirloin tip roast surrounded by carrots, potatoes, and herbs.

Here are answers to some of the most common questions about making a perfect **Instant Pot Sirloin Tip Roast**:

What temperature should a sirloin tip roast be cooked to?

For optimal tenderness and flavor, a beef roast like sirloin tip should ideally reach an internal temperature of around 135°F for a medium-rare doneness and 145°F for a medium doneness. Remember that the temperature will rise slightly after cooking due to carryover heat. We recommend using a meat thermometer to ensure accuracy.

How can I keep the vegetables from being too soft?

If you prefer your vegetables with a crisper texture, rather than very soft, a simple adjustment can be made. First, pressure cook the beef roast as directed in the recipe. Once the pressure cooking is complete, perform a Quick Release of the pressure. Then, add the potatoes and carrots to the pot. Secure the lid once more, and pressure cook all together for an additional 3 minutes. Finally, perform another Quick Release. This shorter cooking time ensures the vegetables are tender but still retain some bite.

Can I make this sirloin tip roast in the slow cooker?

Absolutely, this sirloin tip roast recipe adapts beautifully to a slow cooker! To prepare, add the seasoned beef, beef broth, garlic, onions, potatoes, and carrots to your slow cooker. Cook on high for 2-3 hours or on low for 6-8 hours. If you prefer vegetables with a bit more firmness, hold off on adding the potatoes and carrots until approximately 1 hour before the total cook time is complete.

What’s the best way to store leftover beef roast?

To ensure your delicious beef roast leftovers stay fresh and safe, allow the meat and vegetables to cool completely to room temperature. Once cooled, transfer them to an airtight container. Refrigerate promptly, and they will keep well for up to four to five days. Leftovers make excellent quick meals!

How can I add more flavor to this dish?

For an even richer and more complex flavor profile, consider adding ÂĽ cup of dry red wine (such as Cabernet Sauvignon or Merlot) to the Instant Pot along with the beef broth before pressure cooking. Additionally, incorporating fresh herbs like sprigs of thyme, rosemary, or a bay leaf can infuse the roast with wonderful aromatic notes. You can also experiment with a pinch of smoked paprika for a subtle smoky depth.

Can I use a frozen sirloin tip roast?

While it is possible to cook a frozen roast in the Instant Pot, it will significantly increase the cooking time and may affect the evenness of the cook. For the best results, we highly recommend thawing your sirloin tip roast completely in the refrigerator before cooking. If you must use a frozen roast, increase the pressure cooking time to 25-30 minutes per pound, and be aware that searing will be difficult or impossible.

What if my Instant Pot shows a “BURN” message?

The “BURN” message usually indicates that there are food bits stuck to the bottom of the inner pot, which can scorch. To prevent this, always ensure you thoroughly deglaze the pot after searing the meat and sautĂ©ing the aromatics (Step 4 in our instructions). Scrape up all browned bits from the bottom before adding the trivet, meat, and vegetables. If the message appears, immediately turn off the Instant Pot, carefully release pressure, and check for scorched food at the bottom. Clean it if necessary, add a little more liquid, and resume cooking.

🍷 🥂 Wine Pairings for Sirloin Tip Roast

Sliced sirloin tip roast surrounded by carrots, potatoes, and herbs with a side of gravy and glass of red wine.

A perfectly cooked **Sirloin Tip Roast**, with its robust beefy flavor and savory gravy, truly shines when paired with the right wine. The richness of the beef calls for a wine that can stand up to its intensity without being overwhelmed, making bold red wines an excellent choice. Here are some top recommendations to elevate your dining experience:

  • **Syrah (or Shiraz):** A fantastic choice, Syrah offers deep fruit flavors like blackberry and plum, often accompanied by notes of black pepper, smoke, and even a hint of game. Its firm tannins and full body complement the savory nature of the roast beautifully, creating a harmonious pairing.
  • **Merlot:** For those who prefer a slightly softer, fruitier red, Merlot is an ideal companion. It typically features lush flavors of cherry, plum, and chocolate, with softer tannins than a Cabernet Sauvignon. Its smooth finish makes it very approachable and a delightful contrast to the hearty beef.
  • **Cabernet Sauvignon:** Often considered the king of red wines for beef, Cabernet Sauvignon brings structure, depth, and rich dark fruit flavors, along with hints of cedar, tobacco, and blackcurrant. Its strong tannins are a perfect match for the protein and fat in the roast, cleansing the palate with each sip.

When selecting your wine, consider the intensity of the roast and gravy. A younger, more vibrant red will highlight the freshness, while an aged, more complex bottle can bring out deeper, more nuanced notes in the dish. Don’t hesitate to experiment with your favorite bold reds to discover your perfect pairing!

🍳 Kitchen Tools and Equipment for Instant Pot Sirloin Tip Roast

Sliced sirloin tip roast surrounded by carrots, potatoes, and herbs in front of an Instant Pot with a side of gravy.

To successfully prepare this mouthwatering **Instant Pot Sirloin Tip Roast**, having the right kitchen tools and equipment will make the process smooth and enjoyable. Here’s a rundown of what you’ll need to get started:

  • **Electric Pressure Cooker:** This is the star appliance for this recipe! I personally use and highly recommend either my Instant Pot Duo 8-quart pressure cooker or my Ninja Foodi Deluxe XL 8-quart pressure cooker. For optimal results with this recipe, a 6-quart or 8-quart electric pressure cooker is essential. Please note: This recipe is not designed for smaller, 3-quart electric pressure cookers, as the volume of ingredients (especially the roast itself) will be too large. Look for models with a “SautĂ©” function, which is crucial for browning the meat and aromatics.
  • **Trivet or Silicone Sling:** An indispensable accessory for pressure cooking roasts, you’ll need either a sturdy metal trivet or a flexible silicone sling. This tool elevates the beef roast above the cooking liquid, ensuring even cooking and preventing the bottom from becoming soggy or burning. A sling also makes it incredibly easy to lift the hot roast out of the pot once it’s done.
  • **Cutting Board and Sharp Knife:** Essential for preparing your vegetables and, later, for slicing the tender beef. A good quality cutting board provides a stable surface, and a sharp chef’s knife ensures clean, safe cuts for your potatoes, carrots, and onions.
  • **Whisk:** A sturdy whisk is invaluable for preparing the smooth, lump-free gravy. It helps thoroughly combine the cornstarch with the pan drippings, ensuring a perfect consistency.
  • **Measuring Cups and Spoons:** For accurate ingredient measurements, ensuring the balance of flavors in your roast and gravy.
  • **Tongs or Meat Forks:** Useful for safely transferring the hot roast during searing and when removing it from the Instant Pot.
  • **Oven Mitts:** Always essential for handling the hot inner pot and for safely performing a quick pressure release.

With these tools at hand, you’re well-equipped to create a delicious and memorable Instant Pot Sirloin Tip Roast!

  • Measuring cups and spoons
  • Tongs
  • Oven mitts

Ingredients

  • 3 pounds sirloin tip roast
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 3 Tablespoons olive oil, divided
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 2 cups beef broth, divided
  • 1 pound Russet potatoes, peeled and chopped into 1-inch pieces
  • 4 carrots, peeled and chopped into 1-inch pieces
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons cornstarch

Instructions

  • Season the beef generously with kosher salt and black pepper on all sides. Set the seasoned roast aside on a plate.
  • Turn the Instant Pot to SAUTE mode. Add 2 Tablespoons of olive oil to the inner pot and allow it to heat for about one minute. Carefully place the seasoned beef into the pot and sear on all sides until well browned. Remove the beef roast and transfer it to a plate; set aside.
  • Add the remaining tablespoon of olive oil to the pot, then add the diced onions and minced garlic. SautĂ© for 1-2 minutes, stirring, until the vegetables are soft and fragrant.
  • Press CANCEL to turn off SAUTE mode. Pour in about ÂĽ cup of beef broth and use a wooden spoon to deglaze the pot, scraping up any browned bits from the bottom. This prevents the BURN warning.
  • Place a trivet or silicone sling into the pot over the garlic and onions. Place the seasoned and seared beef roast on top of the trivet or sling.
  • Add the chopped carrots and potatoes to the pot, arranging them around and even on top of the roast.
  • Pour in the remaining beef broth and the Worcestershire sauce.
  • Secure the lid, ensuring the pressure valve is set to SEALING position. Select PRESSURE COOK (or MANUAL), HI temperature, and set the time to 15 minutes.
  • Allow the electric pressure cooker to come to pressure, then it will count down the 15 minutes. Once cooking is complete, the Instant Pot will beep. Perform a Natural Release for 3 minutes (do nothing). After 3 minutes, use tongs or oven mitts to carefully do a Quick Release by moving the pressure valve to VENTING.
  • Once all pressure is released and the pin drops, carefully twist the lid to open. Remove the roast and vegetables, transferring them to a plate.

Make the Gravy

  • Press SAUTE on the Instant Pot. Add the cornstarch to the remaining liquid in the pot. Whisk vigorously to prevent clumps and allow it to come to a low boil as the gravy thickens.
  • Once the gravy has thickened to your desired consistency, press CANCEL to stop the saute mode.
  • Use oven mitts to carefully remove the Instant Pot inner pot. Strain the gravy over a heatproof bowl or large measuring cup with a spout. Discard any solids from the strainer. Pour the smooth liquid into a gravy boat or serving container. Serve hot with the sirloin tip roast and vegetables.

Notes

This delicious beef roast recipe makes enough to serve 4 to 6 people comfortably.

Important Cooking tips for your Instant Pot Sirloin Tip Roast:

  • **Pressure Build-Up Time:** Remember that your specific pressure cooker will take anywhere from 6 to 15 minutes to come to full pressure before the cooking countdown begins. This is normal and varies by appliance.
  • **Desired Doneness:** This recipe is calibrated to achieve a medium-rare beef roast. If you prefer your beef cooked to medium or well-done, you will need to add additional time to the pressure cooking phase (e.g., 2-3 minutes more for medium, 5-7 minutes for well-done). Always check with a meat thermometer.
  • **Meat Preparation:** For the best results, ensure your sirloin tip roast is fully thawed if frozen and allowed to rest at room temperature for approximately 20-30 minutes before you begin cooking. This promotes more even cooking.
  • **Marbling Considerations:** If your particular cut of meat has more marbling (fat distribution), it may benefit from a slightly longer cooking time to achieve desired tenderness. Adjust as needed based on your experience.
  • **Pressure Cooker Variability:** Every electric pressure cooker model can vary slightly in its cooking performance. For our Instant Pot, 15 minutes is the ideal amount of time for a 3-pound sirloin tip roast to reach a perfect medium-rare. You may need to adjust slightly for your specific model.

No pressure cooker? No problem! You can easily adapt this concept by making our One-Pan Sirloin Tip Roast with Vegetables in the oven, which offers equally delicious results.

For even richer flavor: To deepen the savory notes, you can add ÂĽ cup of red wine (such as a dry Cabernet or Merlot) to the Instant Pot along with the beef broth during step 7.

Enhance with Herbs: Introduce fresh aromatic herbs like sprigs of thyme, rosemary, and/or oregano to the pot when you add the liquids for an extra layer of fragrant flavor.

Adjusting Garlic Intensity: If you prefer a milder garlic flavor, feel free to use fewer cloves than recommended. Alternatively, you can substitute 1 teaspoon of garlic powder for the fresh minced garlic.

Safety note for Pressure Release: When performing a quick release of pressure, never place your face or bare hands directly over the pressure release valve. The steam released is extremely hot and can cause severe burns. Always use tongs, a long wooden spoon, or thick oven mitts to turn the valve from SEALING to VENTING, keeping your face and hands a safe distance away from the hot steam.

For crisper vegetables: If you prefer your vegetables to have a bit more bite rather than being very soft, you can add them towards the end of the cooking cycle. First, pressure cook the beef roast alone as directed. Once cooking is complete, perform a Quick Release, remove the lid, and then add the potatoes and carrots. Return the lid, and pressure cook for an additional 3 minutes, followed by another Quick Release.
