During my visit to Albuquerque, I had the wonderful opportunity to try Stand-Up Paddleboarding (SUP) with SOL Sports on the beautiful Cochiti Lake. New Mexico proudly proclaims itself the “Land of Enchantment,” but it could just as easily be called the “Land of Chile”! In Albuquerque, a quintessential dining experience involves being asked a crucial question: do you prefer red chiles or green chiles with your meal? This isn’t just a culinary choice; it’s a cultural staple. If you’re looking to embrace the local way and truly indulge, you’ll learn to ask for “Christmas” – which means you want both red and green chile sauces generously slathered over your dish!

Through my culinary explorations at various local restaurants, I discovered that there’s truly no definitive way to predict which chile will be hotter – the red or the green – until you actually taste it. The heat level, and indeed the flavor profile, can vary significantly depending on the specific type of chile used, its ripeness, and the chef’s unique preparation methods. Some green chiles might offer a vibrant, earthy burn, while others are mild and tangy. Similarly, red chiles can range from a deep, smoky heat to a rich, mellow warmth.

I personally enjoy both spicy red chiles and mild red chiles, as well as fiery green chiles and subtly flavored green chiles. My recommendation is to go for “Christmas” as often as possible; I believe it offers the most complex and robust flavor experience, allowing you to enjoy the best of both worlds in a single, harmonious plate.
