- 3 cups all-purpose flour, divided
- 2 teaspoons baking powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 12-ounce bottle of beer
- 1 large egg, lightly beaten
- 1 teaspoon Old Bay seasoning
- Olive oil or avocado oil cooking spray
- Malt vinegar and tartar sauce, for serving (optional)
Instructions
- Preheat the air fryer to 400°F (200°C) for 5 minutes.
- Line a quarter-sheet baking tray with parchment paper and set aside for the battered fillets to rest on.
- In one large bowl whisk together 1½ cups of the flour, the baking powder, salt, pepper, beer, and egg until relatively smooth. Small lumps are fine; avoid overmixing.
- In a second bowl combine the remaining 1½ cups flour with the Old Bay seasoning. This is the dry dredge.
- Pat the fish dry. Working one piece at a time, dip each fillet into the wet batter to coat, then gently shake off excess and immediately dredge in the seasoned flour. Place the coated fillets on the prepared tray. Once all fillets are coated, refrigerate for 10 minutes to set the batter.
